Whenever I get my economy up as best it can my government changes from democracy to corporate rule? What's up with that?

I believe the UN categories are based upon economic, personal, and political freedoms. From this chart (and your current category) I'd guess you've been moving from and inoffensive centrist democracy to a capitalist paradise.

As can be seen from the chart, the difference is that a capitalist paradise has high economic freedoms and inoffensive centrist democracy has medium economic freedoms.
Be careful though, economic freedom is not the same thing as economic strength; nations can have low economic freedoms and a strong economy. So if you want to keep the inoffensive centrist democracy status while maintaining a strong economy I'd suggest trying to answer issues in such a way as to regulate your nation's economic freedom to a medium level.
