Hello again.

As you may have noticed... I am interested in learning languages, but which "chinese" do you speak of? Mandarin or Cantonese or...? Also, I am not Chinese... does this matter?

Chinese is all written the same. It's just read differently between Cantonese and Mandarin. Same grammar, same structure, same meaning, just different pronounciation.
