I know it's illegal to have more than one UN nation, but is it OK to apply more than once but only accept one, or to have one, apply, get the email, resign on the UN nation you alredy had, and then activate the link in the email?

You can apply for more than one nation IF you only click the activation link in ONE of the e-mails, and if you don't already have another UN nation.
If you wish to change your UN nation, it is HIGHLY recommmended that you wait at LEAST 24 hours after you resign your first UN nation before putting the new one into the UN, to avoid looking like a multi.
