If I have two nations with UN status and 3 without UN status, and I get caught multi-ing... Will only the 2 UN nations get deleted, or all 5?

If you're declaring your intention to cheat, then I'll just go ahead and assume you would get the maximum punishment.
It's not a legitimate question to ask how lenient we would be WHEN you break the rules. If you want a better answer, go read the sticky link in my signature.

So, uh, please, may I have an answer?
Normally, we'd just eject. However, if we have reason to believe that the person is fully aware that they are breaking the rules (say, by creating a thread asking about it), we're much more likely to give out a harsher punishment. And when said player starts getting snippy about it, the chances rise to very close to 100% that a "scortched Earth" policy will be used.

I believe, if you were caught with the multi's, the non-UN member nations would only get ejected if they were recently in the UN too. But then, that all depends on the MOD who caught you and if these nations did anything to catch the MOD's attention, but in your case, count on total annialation.
