Ok, I am aware it is possible to have more than one country/nation by re-registering. And the fact you can only have one country in the UN. However, I was curious if I currently resigned from the UN with this country (Korbania.) And create a new one, could I re-sign up for the UN with my new country?

Yes, you can.
It is best to wait 24 hours after you resign with your current country before you sign up with the new country.
