Since you cannot grant my region a founder, can you help us re-found the region? This is becoming a serious liability, as I get reports invader regions have us on a target list for not having a founder.
Is there anyway the mods can aid us in this respect? Such as delete the region at a set time, or something?

Ireland is on the target list for organizing invasions (like the ones in Northern Ireland), not just for not having a founder in and of itself.
Add to it that the Ireland Founder was deleted for rule violations, and it looks to me like you have a rather weak case...

if you want to refound, you have to get everyone to leave the region (don't kick them out) and then when the region is empty at update, it will be deleted.
then you can refound, although of course, there's a risk someone else will try to refound as well..

Simple, everyone goes, UN Delegate adds a password and is last to leave minutes before the update starts. Keep checking it and as soon as it goes, go back in and re-found it.
Region hawk your own region if you will.

It may be very hard to get everyone to leave the region in a timely fashion, however. Since you can't eject them, it would be very risky. My region was founderless for a very long time, and we survived through password protection and a recruit region. If you do try this, good luck! I actually had RL nightmares about invasions when Nasi was founderless. lol
