Since Melkor is off for a while, will there be enough mods?

This game needs about 30 or 40 moderator, so one more or less will not make much of a difference :P

Actually, one more might make the difference between keeping up with the Mod tasklist and falling (further) behind. When players get the feeling injustices go unpunished and others are getting away with advantages that way, they can easily lose interest in the game or decide to cheat as well to 'level the playing field'.

When did Melkor take off?? Was there an announcement thread somewhere that I missed?

There was/is a thread in NationStates concerning Melkor's leave of absence.
In short, due to real life issues, Melkor is going to be away for a few days/weeks, possible longer.
As of right now, Melkor is still a Sr Game Mod, and no one is going to be "hired" to take his place.
