It is April of 1792, and France has just invaded the Austrian Netherlands. King Louis XVI is still alive, 'though only for a few months, Napoleon is a mere lieutenant-colonel in a Corsican rebel faction, and many European monarchs are feeling rather nervous about their people getting ideas involving things like this newfangled 'vote'.
In other words, history is at a turning point. The king of France may be about to lose his head, but, as an example, a Spanish invasion of Corsica may cut short the Emperor-to-be's military career. The people of Poland may take a stand against the partition, the Ottoman Empire may experience a revival of its bygone glory, the various Indian rulers may take it into their heads to drive out the Europeans.
Half the world is hanging by a thread, and everywhere else is at a crossroads. The United States is on the verge of a great Westrward expansion, France is poised to shake the balance of power in Europe and Spain is struggling to hold on to its empire. The smallest push may send world events spiraling off in entirely unexpected directions.

Currently we only have three claimed nations. The Russian Empire, the French Republic, and the Kingdom of Prussia.
We could definitely use knowledgeable Austrian, British and Spanish players, key nations in the War of the First Coalition, which will begin quite quickly, giving us something to start off with and providing a bit of action.
Of course, by no means, are claims limited to Europe. Qing China is still a force to be reckoned with, and its loss of power is, by this point, not irreversible. Siam is experiencing one of its greatest moments, under Rama I its influence is felt by all of its neighbors.

I was thinking about Italy, but NOT in states but the United Italy. If that is acceptible and using a fake real-life king. However I am not sure how much troop they had for each Italian states

Good luck uniting them, at this point. You can only claim existing nations.
Finding info for the larger states and the Papal States probably wouldn't be TOO difficult.
I'd suggest Naples, though. Its really the only Italian state that can put up any kind of fight against an invader at this point.

I couldn't find much about Sweden, there wasn't any good info on wikipedia. For your time frame, it was during the Age of Sweden, with only 1-2 paragraphs about it.

Sweden is in decline at this point. They managed to sort-of win the last Russo-Swedish war, but both sides basically considered the whole thing rather embarrassing and apparently decided to just forget it happened.
A Sweden would be kind of nice, though. I'd be quite glad to take any spare Finlands off your hands ;)

How about Denmark-Norway? As King Frederick V (real king) but trying to find the numbers of troops...unless however you want me to estimate.

On an old RP I was on, I got some info on Denmark-Norway, perhaps that could help you out. If you want a larger nation, Austria and some others are still open.

Denmark-Norway is fine. As is Sweden. Either of the Baltic powers is excellent.

Now all we need are Turkish people to play the Ottoman Empire, a Sicilian person to play Sicily, a Sardinian person to play Sardinia, and a Bavarian person to play Bavaria, etc. etc.

Yes, indeed. Spain always seems to run no matter which RP I look at. In CoN, everything revolved around him until he fled. In an old E1836, I recall missing the Spanish Empire. In EC, Aragon was being mashed up by the entirety of Europe. Et cetera.

Or, of course, Japan could send an army of kickass samurai to France to help with the war!
