Well, I think I RP normally, because I enjoy writing, but, I just DON'T KNOW WHAT ARE REALISTIC STATS FOR PLANES,etc.

For Real Life (RL) planes your best bet is to look up referance sites such as www.fas.org etc, or just doing a google search on a particular aircraft.
As for making your own it's all about haveing some idea of what actually exists and then extrapolating what could exist if conditions X, Y and Z are met.
