I don't mind many kinds of meat but I am partial to bird meat. I like chicken, turkey, geese and duck. I do accept that there's one kind of meat that I would not touch, at all, and that's rabbit.

Rabbit's not that great. You're not missing much.

(It is actually an almost 'bird' flavor, though... if you've tried something like pheasant, something a bit gamey).

I've heard rumors that Chinese restaurants get the cats and turn them into the curry chicken, orange sauce chicken and garlic chicken with fried rice people are so fond of ordering. Now, take a look at what passes for chicken in those restaurants? That meat looks... odd. In Puerto Rico, where I'm staying now, it is alleged that they hunt and kill the big, green lizards one can own as pets, gallinas de palo, and their meat is what you eat in their dishes. I mean, this is all speculation, but it does make one wonder what's being served to us on those styrofoam containers.

That 'transition' between chicken and goose? The sort of 'depth' of flavor (I notice this especially in the difference between chicken and goose eggs) is like the transition between something like goose and something like pheasant.

I'm not especially partial to 'gamey' flavors. I'll take goat or lamb over deer every time. I'd take goose or duck over pheasant. I'll pass over rabbit or hare if there's something else on offer... :)

There a rather amusing song I found years ago called "Cats in the Kettle" (to the tune of "Cats in the Cradle")about chinese resturants. I worked as a chinese chef many years ago, and I find the song hilarious.

I had not heard about the lizards, but I do know that alligator is eaten around the gulf coast in the USA. Never tried it myself.

It's going to be an urban myth 999 times from every thousand, because it's not that expensive to get poultry, especially if you're going for dishes where the cuts don't have to be super pretty...

The sheer volume of product restaurants need pretty much rules out rounding up 'mystery meat'.

Alligator? Hm. I don't know, it's possible, those things are plenty and they need to do something about them. I heard reptile meat has a tendency to taste a lot like sea food, but that that depends on the diet of the animal and how you cure the meat before cooking.

Rich flavor, good texture... kinda 'grainy', which is why I compare it to goat or lamb.

I'm not much for the 'richness', but I know a lot of people that swear by it.

I like it, cooked, in sushi. Other than that, I have never eaten eel any other way. Of course, in the West, eel is cooked for sushi, but in Japan, it's served raw. A Japanese friend of mine said it was kinda oily. But I'm not sure it is because I haven't had it raw.

I do not eat pork.
I've only eaten pork a few times, but usually it's an awful, cheap, chewy meat that's just disgusting.

The most edible (read: least disgusting) ham I've had was a thin-sliced Iberian ham in Madrid, I beleive. I had to try it just cuz it was the right thing to do, but it wasn't that great. Their manchego cheese (other national dish) was much better than the ham.

Although, that was ham and pork tastes about a zillion times worse than ham so......:p

I think that my problem is that my tongue's too sensitive. Something that may seem mild to someone, to me is horribly spicy.
