Crock Pot/Slow Cooker Recipes

I don't use my crock pot nearly enough. I have one but I just don't use it too often and I think I absolutly should. Its handy, easy to use, easy to wash, and I can take it with me to work on days I'd otherwise miss out on a home cooked meal (like today).

Today I just cooked a pork steak and a couple idaho potatoes in my crock pot with some golden mushroom soup.. its amazing! The meat melts in my mouth its so tender, I don't even need to cut it! The juices from the meat combined with the soup to make a thick and delicious gravy and the potatoes are perfectly cooked; I let it simmer over the course of 6 and a half hours...

So anyway what things do you cook in a crockpot/slow roaster so that I can try those.

What I've always wondered about crock pots (we don't have them here), though: aren't you worried that your house will burn down? Leaving an electrical cooker running all day while nobody's even home?

That's precisely the use for which they're meant.

There's so much you can do with them -

Peel (or not, you can leave the skins on) and chunk potatoes, peel and quarter an onion, peel and crush garlic cloves, scrub and chunk carrots (optional, I find they add too much sweetness) -strew all this over the bottom of the crock.

Then add either -

stew meat
pot roast
port roast
game hen
whole chicken
turkey tenderloins
chicken breasts
or
any tough cut of meat

add seasonings - salt, pepper, bay leaf, sage, oregano, thyme - whatever serves your purpose.

cover with appropriate stock (add water, wine, beer if the stock doesn't completely cover the meat. Cover. Set for however much time you wish.

At work (before I retired) on Hallowe'en, I would fill the crockpot with apple cider (not juice, the flavor of juice is too mild) and mulling spices and heat it up. That and donut holes were my Hallowe'en treat for my coworkers.

My daughter tells me that one of her sergeants made a crockpotted elk roast that was to die for - he put potatoes and onions on the bottom of the crock, placed the roast on that and covered it with dried onion soup mix and a can of mushroom soup, then added water to cover the roast. It wasn't, according to her, gamy or tough.

I think I'm going to try that with bison.

Funny story about the army. In the Barracks in Maryland we were allowed to have a crock pot as long as it had a auto shut off for 30 minutes. like WTF whats the point of a crock pot.

They cover their butt with a warning about electrical appliances without supervision(to avoid lawsuits due to cat interference or other onforeseeables), but these appliances are designed to be run for long peroids of time with very little or no supervision. And the smells are better than potpourri.

we do the odd pot-roast or similar slow-cook casserole, and don't worry about that at all. that said, we tend to do them at weekends, when there are people about anyway. might start to worry now, thanks  ;)

It also works very well with chicken strips and a more fajita-oriented seasoning blend. I also substituted diced tomatoes and peppers for the olives.

Get a wee bit of water, add stock, cut some potatoes in half, then cut some meat up, add somewhat sliced onions and some beans. Then add oregano and a dash of sage, leave for a zillionty hours, come back and have some tasty supper. Serve with crusty bread and eat like a peasant king.

1/2 tsp. dried oregano
1/2 tsp. salt
1/8 teaspoon pepper
1/4 teaspoon cayenne pepper

2 Tbsp. cornstarch

But every recipe NSers post rules! You got any of your own Smunkee?

I use a breakfast casserole I got from LG that's awesome.

I'm a very quick/easy person on crockpot days I do it to save time.....so I have chili

1lb ground beef (I brown it all the day I buy it and freeze it by the pound cooked)
2 cans Ro-tel
1 can Kidney beans
1 can Pinto beans
Chili powder

the longer you cook it the spicier it gets......but the better it tastes.

Stuffing (great for like Thanksgiving when your oven is being used for meat)

3 cups cooled, and crumbled cornbread
1 stick margarine
5 eggs
½ large onion, chopped
½ teaspoon pepper
1 teaspoon powdered sage
Salt to taste
Add broth from turkey ( I used a 16 oz. can of chicken or turkey broth)
Mix well.

You may have to add water too. It needs to be quite juicy or it will be dry.
cook on high for 1 hour, then on medium for 4 or 5 more hours. If you
save a small portion (like 3 cups or so) you can freeze it, then later
you can use it in a meat loaf

my meatloaf recipe isn't crock pot friendly, but here goes (so you
will have something to do with your stuffing)

1 lb ground beef
3 cups of stuffing
1 egg
1 cup water
1 onion diced

mix above ingredients, cover with spaghetti sauce, bake for 30=45
minutes at 350F, save a few slices for sandwiches the next day, it
refrigerates and reheats well, tastes really good served as a meatloaf
sandwich on garlic bread.

Beef Stew
2 lbs stew beef
2 large potatoes (sliced)
1/2 doz carrots (sliced)
2 cans cream of mushroom soup ( or 1 cambells family size ish)
1 can seasoned beef broth

Whatever spices I have available.

low heat for about 12 hours or medium for 8

Pulled Pork Sandwiches

4 lb pork roast
1 onion, chopped
1-2 cups water
16 oz bottle of your favorite BBQ sauce
salt and pepper

1 1/2 - 2 bottles of BBQ sauce tends to work better, but can be added
at any point after you've shredded the pork.

Toss pork roast, half of the onions and water into the crockpot on
high. The level of water should be near the top of the pork roast.
Cook on high for about 6 hours. Turn off crock pot and wait for it to
cool to bearable temperatures. Dump the water and shred the pork roast
with forks or fingers, tossing out bones and any major portions of
fat. Mix in first bottle of BBQ sauce, and any spices you're feeling
adventurous with. Heat on low for a couple of hours, onions should be
completely translucent and limp. Taste, if more BBQ sauce or spices
are needed, add to your liking. Serve on crusty hamburger buns. Works
well with homemade fries.

Apple pork roast

2 lb Boneless pork
1 tb Cooking oil
1 Carrot; small chunks
2 Celery; chopped
3 tb Quick-cooking tapioca
¼ c White wine
1 ts Beef bouillon granules
¼ ts Salt
¼ ts Ground cinnamon
6 oz apple juice

Trim any fat from pork. Cut in half, if necessary, to fit into
crockpot. Place carrots, and celery into bottom of the crockpot.
Sprinkle tapioca over top Add apple juice combined with the other
ingredients. Cook on Low for 10-12 hours or on high for 5 to 6.

Baked apples

2 tb Raisins
¼ c Sugar
1 tsp Cinnamon
6 md Baking apples; washed and cored, (up to 8)
2 tb Butter

Mix raisins and sugar; fill center of apples. Sprinkle with cinnamon
and dot with butter. Put in crockpot; add 1/2 cup water. Cover; cook
on low 7 to 9 hours. (High: 3 to 4 hours.)

Baked chicken breasts

5 Chicken breast halves, boned and skinned
2 tb Butter,
10 ¾ oz Cream of Celery soup, condensed
½ c Dry sherry
1 ts Tarragon or rosemary leaves, (I like rosemary)
1 ts Worcestershire sauce
¼ ts Garlic powder, or garlic salt
8 oz button mushrooms

Rinse chicken breasts and pat dry; place in Crock-Pot. In a
saucepan, combine remaining ingredients and heat until smooth and hot.
Pour over chicken breasts. Cover and cook on low setting for 8 to 10
hours.

(I did it on higher heat to speed things up. I added boiled potatoes
and some paprika towards the end.) For the first time ever, I used
those frozen boneless skinless bags of chicken. NOT BAD! Also, I have
never been one to cook with canned soups before: have learned my
lesson. Once cooked in this recipe, you cannot tell there is canned
soup as base for sauce. This is delish!!!

Baked ham in foil (. . . delicious-and no clean up!)

Wrap pre cooked ham in foil; place in CROCK-POT. Cover and cook on Low
for 6 to 12 hours. If desired, sprinkle ham with honey before wrapping
in foil.

Beef diablo

1 lb Beef Pot Roast -- boneless
¾ ts Chili sauce
¾ lb Potatoes -- peel/slice
¾ ts Worcestershire sauce
¼ Onion sliced
¼ ts Vinegar
1 ½ ts Flour
¼ ts Sugar
¾ ts dark mustard

Trim all excess fat from roast. Place potatoes and onion in bottom of
crockpot. Make a smooth paste of flour, mustard, chili sauce,
Worcestershire sauce, vinegar and sugar. Spread over top of roast (cut
roast in half, if necessary, to fit easily). Place roast in crockpot
on top of potatoes and onions. Cover and cook on LOW setting for 10 to
12 hours (on HIGH setting for 5 to 6 hours).

Thank you Smunkee! NS's resident supermom saves the day again.

My meatloaf recipe is just 1 lbs ground beef, 2 eggs, 3 pieces of white bread, 2 cups of otmeal. Sometimes I add mozzerella or cheddar cheese.
Baked @ 350 and I make my own BBQ sauce to pour over it, like it with BBQ better than gravy.

This is one of my favorites. I got it some time ago from "A Year of CrockPotting." All kind of things you'd never think of cooking in a crock pot are there. http://crockpot365.blogspot.com/ (same link as Smunkeeville ;) )

Apple Butter

The Ingredients.
--apples. 14 large apples fit in my 6.5 quart crockpot
--2 tsp cinnamon
--1 1/4 cups white sugar
--3/4 cup brown sugar
--1/2 tsp cloves
--1 T vanilla

The Directions.

This is a 2-day process. Peel and quarter the apples and take out the core.

Put all of the quartered apples into your crockpot. Add 1 tablespoon of vanilla. Cover and cook on low for 8 hours.

When the cooking is done, mash the apples with a fork. Stir in the sugar, cinnamon, and cloves.

Cover again and cook on low for 6 hours. If you prefer your apple butter to be velvety-smooth, blend with an immersion blender, or blend in small batches in a traditional blender.

And now one of my own.

Place a chuck roast in the pot. Pour on a can of condensed cream of mushroom soup. Top with a packet of dried onion soup mix and 1/4 cup of water or stock. Cover. Cook all day on low. 1 1/2 to 2 hours before you eat, add coarsely chopped carrots, celery, and quartered potatoes (fresh or frozen) and raise heat to medium-high. Cook until veggies are soft. Salt and pepper to taste.

Now you just need to get a bread machine. You do and you'll never eat store bought bread again. Takes all the work out of making your own bread. And it tastes better than the most expensive storebought bread and costs less than all but the cheapest storebought sawdust bread.

Between crockpot meals and bread machine bread, you'll be living high.

I have some boneless chicken breasts that were on sale. I think I'll start them in the slow cooker in the morning with some fresh garlic, spices and lemon juice. Maybe I can throw together something along the lines of a Caribbean jerk style of seasoning(allspice, cinnamon, ginger). I'll make it with some carrots and red potatoes.

Chop 2lb of beef shin (beef shank, I think, for Americans) into chunks. Brown the meat in some olive oil with three cloves of chopped garlic and a sprig of thyme. Season with salt and pepper. Add a bottle of red wine (not sure, you might need less liquid for a slow cooker than done in a casserole). Transfer to slow cooker. Needs at least 4 hours of slow cooking. Check seasoning before serving, maybe garnish with some chopped parsley. Serve with good crusty bread and something like fried courgettes.
