What bird meat do you prefer?

(I'm making the poll with the most common types here in Italy, feel free to add whatever as long it's birds - no bats, no gnats!)

I think duck is the best, but I haven't tried a lot of birds yet, pheasant sounds like it might be good.

EDIT: I thought turduckhen (or however its spelled) is probably the best bird-food item I've ever had

You should try quails. Very similar to chicken, but more tasty. Also hard quail eggs.

Eh Wood Pigeon is delicious. Never tried Rock Pigeon (i.e. Flying Rat Type).

I don't suppose any Americans could explain their love of turkey to the rest of the world? This has always puzzled me. I think the USA is the largest consumer of turkey but it's not very popular here and it tastes like dry and rubbery chicken IMO.

Duck.

Guinea fowl and pheasant are good.

Pigeon is okay.

Never tried quail or partridge - will have to look out for some in the market.

It shouldn't ever be dry. If you're used to cooking a 6-lb. chicken and suddenly attempt a 22-lb. turkey on a lark, you'll probably end up with a dry, flaky, inedible Thanksgiving mess. It happens, and gives turkey a bad name. But good turkey is easily equal to chicken. Turkey's great at absorbing flavors, and has a pleasant taste and texture. That's the only explanation I can think of. It also goes better with bread than chicken, and is primarily a sandwich meat here, versus chicken, which is just eaten on its own.

Turkey is also a good substitute for veal if you want to make a bird meat variant of the Milanese cutlet or of the Wienerschnitzel.

By the way, super easy recipe: fry turkey breast in some olive oil. When it's halfway done, douse with either beer or lemon juice. Complete cooking (low fire) till the liquid is half-dried.

Chicken for me. Never tasted anything else on the list, 'cept for turkey, which I did not like. Ewwww.....

well of course chicken where i live is the most common. next comes turkey.

i don't much care for hassling with whole birds so i usually get only precut parts or ground.

generally legs, thighs, or boneless breasts of chicken, and turkey burger.

i'll eat any of the others just fine, but if it involves stuffing and roasting the whole bird and disposing of the carcus, i'll leave that to someone else. too many zombie chicken attacks in my neighborhood.

There is something appealing about smelling a nice plump turkey baking all day on Thanksgiving or Christmas. I throw my support behind the turkey.

USAmerican's may not realise that what's called squab or pigeon elsewhere includes doves... (Then again they may...)

Either way, Canada and Snow geese and various ducks, shot on the wing would be my faves.

Sparrow, roasted whole on a small spit was... interesting...
