Why is it that when you prepare chickens and fish as food for consumption they are still called chicken and fish but when you prepare cows and pigs they are called beef and pork?

'Beef' and 'pork' are words of French origin, whereas 'cow' and 'pig' are English words. Back in the day, the aristocracy of England spoke French and were also the only ones who could actually eat food like beef. So its from their French language terms that we get the names of beef and pork. I expect that other languages probably don't have the same daftness.

My favourite meat is very rare veal. I'm also partial to a lot of game meat, particularly rabbit, woodpidgeon, pheasant and red grouse.

My favourite meat is wild game: caribou, deer, moose, elk, muscox, grouse, ptarmigan, goose, duck, pheasant, rabbit, muskrat etc. But for the 'farmed' meats...chicken grosses me out aside from the odd fried chicken spree, and pork I eat mostly in the form of bacon and the occasional rib...so it's beef for me! Bison is excellent too, perhaps more excellent. Or fish...hmmm. If my kids ate more fish I'd probably have fish more often.

Boeuf & porc = souvenirs of 1066.

Here in Italy:

vacca, mucca = cow (not used for meat)
bovino = generic bovine
manzo = adult bovine
bue (related to beef) = castrated adult bovine
vitello = veal (less than 1 year old)
vitellone = veal (between 1 and 3 years old)

maiale = pig, pork
suino (related to swine) = pig (not used for meat, but used for salami, or for livestock)
porco = swine (used almost as derogatory: sei un porco! = you swine!)
porcellino = young pig, suckling pig

Have you ever eaten donkey? This question isn't meant to be derisive, I'm just curious. I've never met anyone who's eaten donkey.

Beef. I find pork to be comparatively flavourless, and I only eat chicken in it's least graphic forms (drumsticks (nature's shish kebab) and fillets).

Lamb is delicious. I'm also a big fan of duck.

I do like chicken!
However I also like lamb, beef and pork. Pork meatballs are delicious!
And Goat. Goat is quite nice.

I prefer turkey to chicken. And there are only a bazillion types of fish, most tasting entirely different.

Lordy how could I forget lamb? How I love thee...and goat yes yes (just not the fucking balls, never, ever EVER again)...I've had horse jerky which was okay but I'd like to try it less dessicated. I ate guinea pig in Peru (tasted a bit like rabbit) and crocodile in Cuba (it was an amazing cross between chicken and fish in flavour, so so so so so good!). I've had muskrat, whale meat (and fermented blubber), bear of course, seal in a stew. Squirrel once (wasn't prepared very well). Meat is teh wonderful!

Edit: also turtle, and snake, and these swamp birds that sort of looked like pigeons, but ended up looking a little like rats when they were cooked. I think I had been eating too many rich foods at that point and I couldn't really stomach more.

1. chicken - because its delicous and so versatile
2. beef - minced and steak, yum
3. rose veal - best taste, but difficult to get hold of
4. duck - often expensive, but yummy
5. venison, wood pigeon, and other game
6. fish

i'm not really a fan of pork, except in meatballs and sausages

Pork is an awesome 'mixer' meat. Great in sausages with other meats, and great as flavouring in dishes...not so great on its own IMO.

totally, unless its chinese. pork is great in chinese stuff, but otherwise its a bit meh on its own. minced pork with with minced beef in mixed meatballs is the bestest :)

Salmon grilled with butter, dill and garlic or poached in white wine and dill. Trout dredged in flour and fried in butter. Shrimp any way you can think of. Lobster, king crab, clams, oysters, mussels, snapper, albacore tuna, abalone (which I no longer eat because it's endangered), swordfish ... seafood mmm (except for sea urchin which has the appearance and consistency of baby poop).

After seafood - lamb, beef, bison, chicken - I like most meats, I'll try almost any type, with exceptions for the way it's raised or it's scarcity.

I have recipes for broccoli beef, paper-wrapped chicken, chicken stir-fry, egg fu young, various soups - all without pork. I also have a variety of vegetarian recipes - using tofu, of course.

Steak, roast beef, Prime Rib, hamburger, Sloppy Joe, tacos, and burritos. So many good ones. There is just no stopping. We need a meat flavored dessert.

Although pork is a close second the best being Bacon.

Yes. It's typical here in Lombardy. Donkey brasato (first partly roasted and then cooked in red wine), or donkey cooked in milk.

Too bad that:
1.very few restaurants serve typical lombard cuisine here in Milan (we're full of restaurants of ANY cuisine of Italy and of the world... but no milanese cuisine, damn)
2.donkey is pretty expensive.

It depends on the cut I'm eating.

Florence-style T-bone steaks (fiorentina) must be almost raw (but the meat cannot be too fresh!)
Roast beef must be... well, you know... roasted!
Beef brasato must cook for at least 4 hours in wine.

see this is why I'm mad at myself... I love meat yet I'm so inexperienced with it and I haven't had very many different kinds at all... it makes me sad :(

well, when it comes to steak, I like it rare to medium rare. Depends on my mood at the time. I like it to be warm at the least, but if the center is gray and not at least pink its hard to eat. Any bird/pork has to be thoroughly cooked...

It depends on the cut of pork, and how you cook it. As someone who's previously worked as a butcher, I know that the cuts of pork most popular in the Western world are not the tastiest, they're the leanest. Pork fat is delicious, that's why bacon tastes so good. Lean pork is bad pork.

Ignore tenderloin, go for belly/side meat or shoulder. Boston butt is an American cut of the shoulder that includes the shoulder blade and surrounding tissues. It's very moist and very flavoursome. Particularly good barbequed.

Beef, as rare as possible. As in, barely singed on the outside, raw and bloody all the way through.

The rest of my meat needs to be done more though. Except for sushi/sashimi of course.

No, I know the right cuts to get, and I fully agree on the barbequed suggestion. It's not about tasty, because I think it's got a lot of flavour...I just tend to feel icky after because it's so fatty. I mean...it's soooo good at the time, but sooo bad later. Like eating too much bacon.

Really depends on how it's prepared. A steak or a roast I like medium rare. A braised cut basically has to be well done or it's too tough. Tartar or carpaccio....raw, obviously.
