Weekend Sightseeing in España

In a couple of weeks, I'll be working just Northwest of Madrid. The customers aren't that keen on working weekends, so I'll have quite a bit of free time on Saturday and Sunday.
Specifically, I'm living in a little town called San Lorenzo de El Escorial. I'll have a car and the drive to Madrid doesn't look like a hard one to follow.
Anyone have any tips on what to do? This my first time to Spain, so any suggestion is legitimate, I suppose. What was I thinking... This is NSG. Skip the comments about brothels.
How about souvenirs? Anything that is quintessentially Spanish that I should take home?

Do take a look at the caganers, buy castanets, gorge yourself in wine, try our hot cocoa, eat freshly baked bread, taste our paellas and fabadas and bollines. Eat our ''jamon serrano'', buy music of Elbicho, Estrella Morente, Chambao, Mago de Oz, Camaron. Oh, and of course, do buy one of the "maja" dolls.

Is this a "maja" doll?

Is it from a story, or just an over popular, cute toy, like the "Beanie Babies" were a few years back.

This is the doll I'm referring to.

And these dolls represent the traditional flamenco dance outfits and dancers.

You're welcome.
Good things? Any flamenco related stuff. Or find a bull, it is the symbol. As the expert said, Jamón Serrano (ham). Ask for the "Pata Negra" or "Bellota", those are the best. Maybe a good bottle of red wine, if you are really into the stuff (as I am). Footbal/soccer t shirts and any other thing is typical, (Real Madrid team). Finding a spanish girlfriend is a good investment.
Oh, you can find yourself a hat.
