The Cake is Not a Lie!

Mauryvets describing her family's famous fruit cake recipe got me thinking... and then I remembered the Chocolate Truffle Cake my own mother recently baked for my brother when he came home; and I got to thinking about, well.. cake.

What kind of cake... well... takes the cake in your opinion? Or, for those unfamiliar with that phrase what is your favorite cake?

Mine is by far German Chocolate.

I don't, but give it a minute - cake is popular around here: remember the 'cake vs. pie' thread? Cake was preferred over pie. Insanity, I say, but there you have it. :tongue:

If you mean cake such as birthday cakes, then my favorites would be Princess and Schwarzwald/black forest(gateau) cake.

One of my mom's friends has some family recipe for a chocolate cake that I really like. Everyone calls it things like "chocolate suicide cake" or "suicide by chocolate", but it's goooood. Maybe not so much for heathens who don't like chocolate though =p

Failing that, I've got a weakness for various forms of chocolate and raspberry cakes. :D

So a while back, the Gamefaqs Gemfire board was running too sloe. To lighten thigns up, I started a game as Loryn Divas (who they claim is the "hardest force in the game"... even though we all know Gweyn is harder). Anyway, eventually I reached the point where it was time to take out Lyle's lands and pick up that family's gems. Yup. you guessed it -- that log's title was "The cake is a Lyle! The cake is a Lyle!".

I say ice cream cake, if that's considered a true cake. Tgose Carvel chocolate crunchies are awesome. But cheesecake, especially choclate cheesecake, is also amazing.

Just give me a good Devil's Food chocolate cake, straight up, classic. I love that stuff. When I lived in Vermont, there was a bakery that used to sell the edges and trimmings of cakes left over from making shaped cakes and wedding cakes. They'd sell them by the bag, cheap, for making other desserts. I'd just eat them out of the bag, without even any icing. Or if it's going to be a properly built cake, then I'll just take it with a nice simple buttercream icing, thanks. No fruit, no fondant.

Though, on the other hand, I have a recipe from an ex-co-worker floating lost in my house somewhere, for a bundt cake made from a mix, but doctored with pudding and sherry that is amazingly delicious. Kind of like a super-flavorful poundcake.

My mom's pumpkin chiffon pie, however, is epic goodness.

Checkerboard cake is cool, but it's generally a bit dry. Probably due to the batter required for the pattern to work right.

The chocolate-raspberry boozecake my sister got for her birthday one year was also pretty good. Imagine some variety of really rich chocolate cake, no icing, soaked in Chambord and topped with raspberries and just a little bit of powdered sugar.

.. Though I'm somewhat surprised I can remember that cake, given what a lightweight I am with the alcohol! :D

When I was in High School I had to make an edible element to bring in for a 'science party' I had. I chose the Element Ununseptium (http://www.webelements.com/ununseptium/) (#117 on the periodic table).

It ended up as a yellow sheet cake with butterscotch frosting, smarties, M&Ms, and candy valentines day hearts liberally spread around it. It was the most disgusting thing ever! I loved that cake...

One tres leches cake recipe, coming right up!

Tres Leches Cake Recipe
1 1/2 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon sea salt
6 eggs
1 cup sugar
1/4 cup water
4 teaspoons Mexican vanilla extract
1 - 14 ounce can sweetened condensed milk
1 - 13 ounce can evaporated milk
3 cups heavy cream
2 tablespoons sugar

((THIS IS OPTIONAL, BUT I RECOMMEND STRAWBERRIES)) Fresh mangoes, strawberries, blackberries, or other fresh fruit, sliced

Directions:
Preheat oven to 350 degrees. Coat a 9 by 3 inch springform pan with a vegetable spray like Pam.

Sift the flour, baking powder, and salt together in a medium size bowl.

I like to use a kitchenaid mixer for this recipe or any stand mixer will do. Mix the eggs and sugar in the mixer bowl and beat on high speed for about 5 minutes or until the volume has doubled. Reduce the speed to low and add the vanilla and water. Mix well.

Gently fold the flour ingredients into the egg mixture. You can use the mixer on the slowest setting or fold the flour in with a spatula.

Pour the batter into the springform pan and bake for 35 to 45 minutes. I placed the cake in the center of my oven and it took closer to 45 minutes.

You can tell when it's done when the center is firm and the cake starts to pull away from the sides of the pan.

Cool the cake on a rack for 15 minutes. Place a plate over the cake and turn upside down.

Release the springform pan. I found that the bottom stuck a bit so use a knife to cut along and release the cake.

Place your hand over what is now the bottom of the cake and turn the cake over onto your hand. Gently place the cake right side up onto your serving dish.

Serving It Up
Make sure to serve your tres leches cake on a platter that has a lip to hold in the milk.

Set the cake aside to cool completely. Use a serrated knife to slice and/or peel off the top skin of the cake. You can toss this part away or if you are like me you will probably want to see how it tastes.

When the cake is cool, whisk together in a bowl the evaporated milk, the condensed milk, 1 cup of the heavy cream, and 2 teaspoons of the vanilla.

Using a long tooth pick, ice pick or whatever you have available, poke holes all over the cake. The holes will allow the cake to absorb more of the milk.

Pour or spoon the milk mixture slowly all over the cake and allow it time to soak in before adding more milk. Refrigerate.

When you are ready to serve the cake, place the 2 cups whipping cream in a chilled mixing bowl and begin mixing on medium. Add the vanilla and the sugar a tablespoon at a time and beat on high until stiff peaks form.

Spread whipping cream generously on the top of cake. I garnished mine with sliced strawberries the first time and blackberries the second time.

What a special treat this delicious dessert is. I assure you I will be making this again. Be sure to refrigerate leftovers, if there are any.
