Side Dishes

I'm tired of politics, religion, economics and just about everything we've all been discussing to death for the past few weeks. I want something different (not new, just different).
So, we've talked about favorite foods, but usually in the entree or dessert category. What side dishes do you like? Anything unusual? Anything usual, but done in an unusual fashion?
I like sweet potatos - but not candied. I think they're sweet enough without mucking them up with syrup and marshmallows. I like them baked and served with salt, pepper and butter.

Potato skins. Baked to crispiness. With a slight powdering of chili powder and crumbled bacon held together by a melting coat of cheese. Crunchy, munchy goodness.
brockley, or kali flower, with cream of multi cheese sauce. actually i prefer my "side dishes" to be interchaingable with main courses. i also prefer all food to be on top of the dishes as the sides are rather narrow and there's this thing called gravity and being on a plate makes it a lot easier to clean up the table.

Beancurd tofu, with light flour coating, a dash of salt, and fried for a soft, slightly crispy, exterior. I know it's a side dish, but I could definitely put a lot of these away for a whole meal.

omg! I love that stuff!
I also like most things that can be done with potatoes... mashed, scalloped, roasted, boiled and sprinkled with some spices, chopped and fried in a pan, baked...

I like mashed potatoes, corn, green beans (except the ones cooked with tomatoes), peas, carrots, and/or broccoli. Mashed potatoes is my favorite though. Just a quick question here: Has anyone else besides me ever had a mashed potato sandwich (mashed potatoes and gravy between 2 slices of bread, nothing else), or am I the crazy one?
