(Sorry, not trying to start a copycat trend.)
What is your favourite guitar solo? Here would be my favourite ones, in no particular order:
1. Jimi Hendrix - "Red House" from the live bootleg, The Scene Club, 1967
2. Duane Allman - "Whipping Post" from At Fillmore East, the live 1971 double
3. J. Mascis - "We're Not Alone" (http://www.youtube.com/watch?v=cOB0pO9vZKc) from Dinosaur Jr's new album
4. Rory Gallagher - "Shin Kicker" (I only have the live version on the Etched in Blue compilation, don't know the original provenance)
5. Wes Montgomery - "O.G.D." with Jimmy Smith (my favourite jazz guitar solo)
Anyone else got any particular favourites?

The solo on Taxman, by the Beatles. Not ridiculously complicated, but I love it. http://uk.youtube.com/watch?v=T4sQoehLxvY

Or While My Guitar Gently Weeps by the Beatles, lead guitar by Eric Clapton, but there's a few mini solos and 2 big ones so there isn't a video out there with only them on.

You know, that solo isn't the most complex thing Clapton has ever played, but I really love it. Good choice!
And you just reminded me of my favourite "duet": Robbie Robertson & Eric Clapton - "Further On up the Road" from The Last Waltz.
Dumb Ideologies

I'm going to risk being criticised here and say that, although I like metal, I'm not a big fan of the guitar solo as a musical institution. I'm usually checking my watch and wishing they'd get back to the "proper" main bit of the song.

Pretty much anything by this guy (http://uk.youtube.com/watch?v=T89MVl2NcPg) whether as an instrumental track or as a solo in a song. I may update this link with a better video I have bookmarked on my home computer.

The solo from "Seven" by Symphony X is some kind of awesome. And the one from "Set the World on Fire" comes in a close second.

Perhaps Rodrigo's Concierto de Aranjuez, though maybe it's just I enjoyed playing the cor anglais solo at the beginning.

Listen to Paco de Lucía's version.

Listen to Paco de Lucía's version.
His version on Youtube is certainly excellent.
And I notice (wiki) that Rodrigo said that de Lucía's recording of it was the best ever made.
Can't say I know any other decent classical guitar pieces, though there's certainly some good lute music (Purcell's Dido and Aeneas has some great lute interludes).

David Gilmour of Pink Floyd - "Comfortably Numb" from The Wall
George Harrison of the Beatles - "While My Guitar Gently Weeps" from the White Album
Hmmm...Johnny B. Goode, I suppose.
And various other guitar bits that I don't remember.

Comfortably Numb, Pink Floyd. Nuff said.
Slash (Guns N Roses) - "Sweet Child O' Mine"
Billy Gibbons (ZZ Top) - "La Grange"
Two I can think of now that I do like, I'm very picky about what a good solo is.
