A spin off from the How to Save a Bad Meal Thread.
What's your best off the top of your head, just threw it together, meal?
Mine is:
Slumgullion
1 lb ground beef
1 small onion, diced
1 can diced tomatoes
8 oz. elbow mac
Small package of frozen corn
Salt, pepper, garlic powder to taste
Italian herbs to taste
grated cheese
oil
Put oil in frying pan and heat. Sweat onions. Add crumbled beef and brown. Add tomatoes. Season. Add macaroni. Add water if necessary, to cover macaroni. Bring to a boil. Lower heat, cover and cook until mac is tender. Add corn, adjust seasonings.
Serve with cheese grated over the top.
I was broke, the kids were hungry, and I was royally tired of all the other things I was doing with hamburger meat.

About an hour ago, I cooked two packages of ramen, drained out most the liquid, added some leftover stir-fried chicken and veggies, added some ginger seasoned soy sauce, garlic, black pepper and basil. Then I tossed it and enjoyed with a Dogfish Head 60 minute IPA(one of the best beers ever, and the best easy to find beer in my area).
Don't remember, but I threw a bunch of stuff in a vaccum tumbler with some chicken. I think it was ranch, BBQ sauce, and other spices.

Take some sort of meat, bread it, burn it, and add some good spices.
Frittata. By far the easiest "it took me all day" meal ever. :)

The "stuff in the fridge that needs used today" curry is always a winner :)
chicken, cut into strips and cooked in olive oil and a vodka sauce . . .lol ya made to little pasta for the sauce one night and was left with that . . .actually tastes ok

Buy Shrimp cocktail, take the tails off, throw away that red dipping sauce. Warm some tortillas in a pan, also in another pan sautee some onions, peppers and lime add in the shrimp stirring often until it's warm......put them all together, shrimp tacos!

I made buffalo chicken burgers the other night...
ground chicken, this buffalo bleu cheese dipping sauce, and French's Fried Onions. turned out great.
Eggs also make a great base for anything...omelette or frittata.

We tried them, and for half an hour, I was able to drink white vinegar with no problem, and loved grapefruit (which I usually hate). Lemons tasted like lemonade, limes like sorbet.
Seriously, I felt sick thinking about what I ate after, but it cleaned the fridge real quick.

We had a surplus of cheese and mushrooms...
So we stemmed the mushrooms, turned them upside down...
In a pan, we put a stick of butter, some garlic, some gouda, some gorgonzola, and sauteed it all into a thick, cheesy, carlicy filling, and we put it in the upside 'shrooms...
And then we covered it with mozarella and baked it.
And then we ate it.
And then watched "The Big Lebowski".

Quick? Tuna casserole based on Kraft Mac and Cheese.
Creative? A really good bacon and feta cheese salad.
Favorite? A sort of lasagna that I make in the frying pan with leftover spaghetti sauce, bow-tie pasta, and mozzarella cheese. If I have sausage, that also works well in the mix.

Oh, there are a few that I'm working on.
It can be a bit weird....with hot sauce, it tastes sweet, but you can still feel the heat from it. I did that to my friend who hates hot foods with habanero sauce.
By the way, you can find them on ebay.

brown meat in pot.
Drain oil
add one can Campbells vegitable/Alphabet/Tomato soup
add one can water if adding uncooked rice
add Veggies if using tomato soup
cook untill meat or rice is of right consistancy
use flour or cornstarch to thicken
season to taste.

Well, I got some free prosciutto courtesy of an expensive mistake on the part of my grocery service, so tonight I'm defrosting a chicken breast, will wrap a couple slices of proscuitto around it, pan grill it in olive oil, minced garlic, and a bit of rosemary from my herb garden, and at the end, drop a little shredded mozzarella on top.
I'm going to toss some microwave peas in the oven, too.
One of my favorite fast meals though is: make a box of rice-a-roni according to directions.
Toss a small can of peas into it in the last five minutes of cooking.
Throw it into a large bowl, and throw in one drained can of tuna.
Mix and eat.

Did you know that you can bake prosciutto and get it to be nice and crispy? Then crumble it like bacon on top of something like gnocchi. Mmmmm.

Well, I got some free prosciutto courtesy of an expensive mistake on the part of my grocery service, so tonight I'm defrosting a chicken breast, will wrap a couple slices of proscuitto around it, pan grill it in olive oil, minced garlic, and a bit of rosemary from my herb garden, and at the end, drop a little shredded mozzarella on top.
I'm going to toss some microwave peas in the oven, too.
One of my favorite fast meals though is: make a box of rice-a-roni according to directions.
Toss a small can of peas into it in the last five minutes of cooking.
Throw it into a large bowl, and throw in one drained can of tuna.
Mix and eat.
I butterfly the chicken breast, roll it around the proscuitto and some Provolone cheese, roll the resulting lump in seasoned flour, egg and Italian seasoned bread crumbs and bake it.
