MAKUBETSU -- The NEEDS cheese factory in Tokachi Subprefecture’s Makubetsu Town has released a new product known as a cheese drink. According to the Ebetsu-based Hokkaido Food Processing Research Center, such liquid cheese is rare in the prefecture.

The new drink comes in three flavors -- plain, blueberry and yuzu citrus. The new product is said to taste like a yogurt drink, but has lower acidity and a rich cheese aftertaste. The production process involves the use of oligosaccharide from Hokkaido to cut down on the sweetness, making it easy to drink.

The formula is basically the same as that of ordinary solid cheese; a curdy mixture is made by adding lactic acid bacteria and rennet to fresh milk from the Makubetsu area. At the end of the process, however, the mixture remains liquid through the retention of liquid whey.

An official from the cheese factory said, “We want consumers to be more familiar with cheese, so we’ve made a liquid version that makes it more accessible. It’s also good as a salad dressing.”

The 130-gram bottles cost 250 yen before tax, and are best consumed within two weeks. They are available directly from the factory, from the Wine Castle in Tokachi Subprefecture’s Ikeda Town, at JR Obihiro Station kiosks and by mail order.

I don't see anything unusual in this. Apart from the irony of taking a milk based solid and turing it into liquid. Shit why not just add blueberry to milk?

If 'Cheese Drink Goes on Sale" makes the news, there can't be much happening in the world....

Although the "rich cheese aftertaste" has really sold me. Apart from eating rich cheese and waiting for a bit, this is so hard to come by in modern products.

A lot of Asians are lactose intolerance, hence most tend not to try cheese.

Not sure liquifying solves the problem but innovation will try anything.

Well, depends on the cheese. Soft cheeses are hell on the digestion if you're intolerant -- hard cheeses are fine. (Mozzarella v. Parmagiana, for example).

You'd be surprised. In the four years since I've been in Japan there's been an explosion of cheese, but it's still hard to find the stuff, or rather, anything beyond processed slices.

You know, I just did some checking. Sending cheese to Japan is considerably more complicated than I would have thought. I was under the impression that UPS considered it to be the unofficial 51st state. Hmph. :(
