I'm not Irish but I know one:

1 part Murphys Red mixed with 1 part Murphys red. It makes for a great beer *nod* :D

Guinness? I don't think the Irish do cocktails. Irish drinking culture tends to focus on traditional bars, not glitzy clubs. I think you might get thrown out if you ask for a Woo-Woo.

Guinness
Baileys
Jamesons (or other Irish whiskey)

Pour beer into pint glass
pour baileys into shot glass
float Jamesons on Baileys
drop shot glass in
drink quickly

The major Irish drink recipe, as far as know:

1. Take Guinness.
2. Pour Guinness into pint glass.
3. Consume Guinness.
4. Order more Guinness.

(Also, don't try the Irish car bomb - it's not a particularly tasty combination, and unless you drink it very quickly, it becomes a really, really, really gross combination.)

The Irish do have clubs, you know... and they're not so alien to lager, either. Stout's all well and good, and still very popular, naturally, but it's not just perpetually the 70s in Ireland. Dublin's one of the youngest cities I've known, and there's plenty of nightlife going on besides the pubs.:p

There are plenty of clubs in Dublin right a long with the traditional pubs. In fact I do not believe I have ever seen more drunk people anywhere I have been.

Yeah, now it is, but while they were inventing cocktails in New York and the Carribean I don't think the drinking culture in Ireland was quite the same. Hence the reason why I can't think of a single famous Irish cocktail.
