The Caliphate's power would have eroded just like the Pope's did. Secular monarch's would get fed up and go their own way. Heck, the Caliphate's could have had to deal with schisms like the Protestant-Catholic divide, which had many, many wars fought over it in Europe, and I imagine it would have been similar for the Caliphates.
So. The Caliphates probably would have had a century or two more of power, but would have weakened itself/themselves by infighting, and secular monarch's would eventually throw off their power.
My two cents, anyway.

The turks never invaded where? Iran & the rest of the Middle East? Europe? The area that's now Sinikiang-Uighur?

Byzantium probably would've survived. The Abbasid Caliphate was on it's way out anyway at the time of the Turkish invasion. If Byzantium survived, the Renaissance would've been partly delayed (since the Renaissance was caused, in part, by Greek scholars fleeing Constantinople), and with the West's trade to the Orient not vitally disrupted, Westerners would have had no reason to sail to try to find a water route, so the Age of Exploration would've happened very late, if it even happened at all. Which would've left the New World either in Chinese hands, or, more likely, in native hands, with the Aztec and Incan Empires growing to huge proportions and spreading civilization to the far corners of the hemisphere.

Fuuh, and that's would be good.
Now searching for a way to kill the turks in the 7th Century.
all things chainge in time, ottoman turks or no. certainly there would not have been the balkins bit that there was like there was, the austrio hungary thing, the whole context of the wwi that took place on our timeline would have been entirely different. vienna and paris strong ties and an open corridor. probably no vichie and no germany as such either, but perhapse something like today's north rhine westphalia would have been a country.
i always like to think of a more peaceful and happier world in my what ifs, though i know this is just a flip of the coin neither more nor less likely then the other.
it would be a trip though if instead of a russan revolution, there had been a peaceful evolution, with poetor kropotkin actually ascending the throne and creating a royal monarchist socialism.
i'm not saying whats likely, but i like to dream wild and beautiful.
