I've always wondered why large pizza chains take so long cooking I mean I've been to this one place that is just like domino's and you watch them cook the pizzas and such...they take maybe 5 minuets at the most!

Pizza is meant to be cooked at high heat and very fast, makes it great fast food. Why chains take so long I'll never know. I had pizza last night and it took near an hour. Though it was really really good pizza.


Now, Cold pizza (fridge) or room temperature? Personally I prefer room temperature, putting it in the refrigerator to cool makes it too solid, loses all it's lovely texture.

Cold pizza is good, often better than hot. Used to love cold pizza as a kid, but I've learned to appreciate the texture component of cool pizza rather than a slab of cold.

nah...the crust just gets crappy. And sure, you could reheat it in the oven, but then the crust is overcooked and it takes way too long

hmm, I never even keep pizza in the fridge, I always finish it. when I have the opportunity (and probably while drunk, I don't see myself doing something like that while sober) I will try some cold pizza.

That's why you use the oven. 350F for 8 to 10 minutes. Perfect balance of hot and crust preservation. Any longer and you're eating crostini with toppings.

The best non-chain pizza I've ever had comes from Village Pizza in Roslyn, WA (the little town that played Cicely, AK on the 90's CBS TV show, Northern Exposure). They offer garlic as a topping in and of itself -- diced cloves of loveliness in light, medium or heavy denominations. My favorite there was chicken, cashews, red onion and garlic with BBQ sauce. Also liked spinach, cashew and chicken in alfredo sauce.

Of the chains, I most consistently order from Papa Murphy's (talk about watching it being made -- they do a Mediterranean that's feta, spinach, chicken and sun-dried tomatoes with a bit of mozzarella that's quite nice on a thin crust) or Papa John's (when I'm feeling too lazy to pop something in the oven and save about $10...which is very rare anymore). Pizza Hut and Domino's are abominations before the Pizza God and should be smote.

For my money -- and they're expensive, but worth it once in a while -- the best chain is Round Table Pizza. The King Arthur Supreme: pepperoni, salami, sausage, linguica(!), mushrooms, green bells, olives, onions. Past excellent!

A five cheese pizza sounds 'dairy heavy' to me and defeats the purpose of a great pizza which, I believe, is to allow all the ingredients to shine! In my book, pizza is really..."less is more".

That's why the Neapolitan classic..."Pizza Margherita" is all I need. Fresh tomatoes (I prefer 'plum'), buffalo mozzarella, basil, fine-quality olive oil, oregano and a suberb crust (thin). Every flavor holds it's own, yet the melange is unbearably delicious!

And 'the wash'?.....Zinfandel, please. The spice notes can compete and actually enhance the herbal power of the basil and oregano.

BTW, I'm a food & wine educator. ;)

a restaurant near me does a great Calzone with chicken, meatballs, bolognese sauce, and chillis. very tasty :D

Yes, I've had/made a pizza like this. I also added cornmeal and saffron broth into the crust. It was at a big party and little did I know, I would be besieged by the partygoers for the next three hours to make MORE. I had to go incognito when we ran out of ingredients.

I had a really good pizza when I was in Naples over the summer.

It had onions, garlic, prosciutto, and some other meat on it. It was the best part of that city.

The first, an animal rights atrocity, will be topped with ham, bacon, back bacon, beef, pepperoni, salami, and all other similar meats that the pizzaria in question serves.

The second will have beef, bacon, and onion. Most places completely fuck this pizza up by doing the onion wrong.

Lots of places have their onion as if it was going to be used to make onion rings: big thick blocks that are scattered across the pizza. Sometimes they chop those into smaller bits; that lessens the damage, but it is still damaging.

The correct way is to slice the onion in to thin wisps that are as wide as a layer is thick. Then you spread it fairly evenly over the pizza. The end result has a much more even oniony taste across the entire pizza. The wrong methods end up with mouthfuls without onion, and others that are nothing but onion.

I am pretty sure they use white onion. It tends to complement other flavors better.

Actually, I love BBQ chicken pizza with lots of red onions. Haven't had it in ages though. The best pizza place in East Lansing just happens to be one of the more expensive. :(

Actually, the Pizza Margherita isn't the neapolitan classic - it was invented in late XIX century, when Queen Margherita di Savoia visited Naples, hence its name. Btw, the original "Margherita" has no oregano because it covers somewhat the basil. The "Margherita" was also chosen as hommage to the colours of the flag of the newly-established Kingdom of Italy, with green (basil), white (mozzarella) and red (tomato).
The Neapolitan classics are what is called the "Marinara" today (tomato sauce, garlic, olive oil and nothing else, not even cheese) and current-day "Napoletana" (tomato sauce, mozzarella, olive oil, anchovies, oregano, and no capers!).

btw, why the hell do all these people want pineapple on pizza... yeech... disgustingly sweet, it has nothing to do with real pizza... damn Hawaii!!!
