how do you get subs out of video files?
If you download, for example, an anime and you want to make an AMV, but don't want the subs in the file, is there a way to get them out?

Weird, usually the subs come as a seperate file, but otherwise i'd imagine you'd need a program that lets you view each "track" (or layer) of the video.
For that - I cannot offer any more help sorry.

If it is an MKV or similar format, the subtitles are a separate included file that can be turned off. However if it is something like AVI or MPG, the subtitles were branded into the video and can't go away. If it is something official, I have no idea. You would probably need to see what format it is and get some hardcore layer separating stuff.

Well, if you're making AMV, you already have some software. Check if it can do it.
Also, reencoding tools generally ask you which subs and voice track you want to put into the file.
To check if subtitles are hard or soft, there are a few simple ways:
1) Look at them. If they have compression artifacts, these are surely hard-coded into video.
2. In MPC, right-click and search for subtitles menu and navigation menu. If subtitle options in both are grayed out and you can' disable them, these are probably hard-coded.
Otherwise, check for official tools for working with the container.
