I've been experimenting with paper wrapped chicken - you know, that wonderful appetizer you can get at Chinese restaurants. I've finally figured out that you use ground chicken, but that's about as far as it goes. I've used ginger, chinese five spice, soy sauce and chopped scallions in various proportions. I've used Hoisin sauce. It doesn't come out like the restaurant variety. Anyone have any suggestions? Does any one have a recipe?
