Smother it in cheese
Spoon a bit of pizza sauce in the middle
Fold over/cover with another burrito wrap

Pesto over fettucini and chicken is always a classic.
I'd say complement it with a nice white whine, I usually go for a Riesling.
Made this by accident last night (I was trying for something else), but my wife loved it:
Vegetable and Bacon Casserole
3 eggs, beaten
1 g thyme (Powder)
3 g garlic powder
35 g fresh grated swiss cheese
3 g Jane's Krazy Mixed-up Pepper
Salt and pepper to taste
80 ml heavy cream
4 small potatoes, peeled and thinly sliced
1 head of broccoli
4 spears of asparagus
130 g of green beans
4 strips of bacon
5 ml olive oil
30 g butter, cubed
DIRECTIONS:
Preheat oven to 190 degrees C
Cut broccoli into small chunks; cut asparagus into 1 inch sections. Boil both until slightly tender, drain and set aside.
In a mixing bowl, stir together eggs, thyme, garlic powder, cheese, Jane's Krazy Mixed-up Pepper, salt, and pepper. Stir in cream and vegetables.
Cut bacon into small sections and stir into mixture until well coated.
Pour mixture into a 9x9 baking dish. Arrange potatoes on top of the mixture, drizzle with olive oil and dot with cubed butter.
Bake, uncovered, in oven for 1 hour or until topmost potatoes are crispy and bottom are tender. Let cool for a few minutes before serving.

This is one my sister (a dietician) developed, and I have tinkered with.
Asian spinach salad
8oz can mandarin oranges in water (oranges in salad, water in dressing)
salad:
1 lb loose leaf fresh spinach
1/3c dried cranberries
1/4c pine nuts
dressing:
1/4c balsamic vinegar
1tbsp corn starch
1/4c warm water
combine spinach, dried cranberries and mandarin oranges in a bowl. Toast pine nuts and add to salad. For dressing, combine orange water and balsamic vinegar, simmering gently for several minutes. Remove from heat and stir in parts of corn starch mixed w/ warm water until dressing reaches desired thickness. Pour warm dressing over top of salad just before serving.
