I guess I am asking how would the world be different today if the Medieval Warm period extended out another 500 years or so? Most know what it is but here is a brief. It is also best to wear a Viking helmet when thinking about the implications. ;)

The Norse Greenlandic and North American colonies would still have died out, in my opinion. Their major problem was not "it got too cold" but that they were unwilling to work with the natives. Especially in Greenland, where the Norse insisted on attempting to use clearly impractical methods to survive, and refused to adopt the techniques of the Inuit.

The reason they died out because the weather changed and they did not adopt the Inuit methods. It was not because while it was warm they didn't have food.
