It's amazing how many people you'll find who enjoy chewing on burnt shoe leather haha. Going with my current meat themed threads, here's the newest one.

I'm a fan of rare myself. It's how steak should be eaten. Quickly seared on the outside, bloody red in the middle.

Well-done, of course. I rarely eat steak, though, unless you want to count steak versions of other meats, such as chicken, in which case it's the same: well-done.

Just cooked enough to be safe, basically. The bloodier the better. If I weren't worried about getting hoofed in the balls, I might just take a bite out of a live cow. Tasty mooing bastards.

Medium rare. Bloody, but cooked enough so that the flesh does not taste slimey. It needs to be silky smooth but still have texture.

I don't like it because I cannot taste it. So I go for what has the best texture: bacon.

Medium rare, but more towards the rare side of the spectrum.

browm steak is a total waste of good meet.

surf and turf is the best meal. yum yum. i'm starting to drool.

I like my steak to be briefly introduced shown the pan/flame before being served up.

Basically Bolt Gun + Kinfe + Cauterise to keep the juices in.


Though I am torn between a preference for Beef Steaks and Tuna Steaks.

Very medium.

Cooked, but not hard. Juicy, but not bloody. In some places i go for medium-well done because i know they have a tendency towards being too rare.

That's Ifreann. When he says steak and intravenously, he just means brain through a straw. I've seen it happen.

MMMMMM, steark tartar. Slimey when done badly, but oh do yummy when done well.

You can probably guess from that that with a lumpy of steak i order it blue-rare in france (i.e. still going moo, its such a pity the english wont seem to sell it like that).

medium well, thin strip of pink in the middle.

I used to be vegan, so the thought of rare meat makes me puke.

If it's well, I can pretend it's not an animal, I have (within the last year) been able to step it back (for steak only) to medium well, a little bit of pink. :cool:

cajun cooked usually is blackened,usually with cayenne pepper and other mouth burning additives.

As far as my steak I usually eat it still bleeding and mooing;)

I like mine either blue rare, char rare, or tartare, depending on how well I trust the chef .

As someone who enjoys proper cajun cooking (having been brought up at the edge of East Texas cajun country), I'd like to point out that the "blackend X" craze set off by Paul Prudhomme's created dish blackened redfish is not a traditional "cajun" dish.

Just FYI:

For the uneducated there are several gradations of cooking steaks. For the purposes of this article “raw” steaks will not be taken into account since most steaks ordered in restaurants are cooked to some degree.

Raw – for some special dishes the steak is not cooked at all. Most famous is perhaps steak tartare which consists of seasoned ground raw beef topped with an egg.

Blue rare– the outside of the steak is seared so that the inside is warmed; the steak will retain much of the redness of the uncooked meat.

Rare – the steak appears cooked on the outside and is very pink on the inside; the centre of the steak, particularly on fillets, will be red.

Medium rare - the steak appears cooked on the outside; the inside will be pink, especially in the center.

Medium - the steak appears cooked on the outside; the inside will be slightly pink in the center.

Medium well - the steak appears cooked on the outside and there will be feint traces of pink in the center. The steak may taste slightly dry.

Well done - the steak appears cooked on the outside; there will be no traces of pink at all in steak. The steak will taste hard and dry.

I've only had steak tartare a few times, but I really liked it. Never tried blue rare though.

I've only had steak tartare a few times, but I really liked it. Never tried blue rare though.

Blue rare's usually how I do it when I grill for me. It's mostly a matter of having a good butcher you trust and the right heat.

As for tartare, in addition to steak tartare, I've had several similar sorts of dishes I quite enjoyed including venison and beef liver (and that's not counting the various sorts of beef, chicken, and horseflesh sashimi I've had the pleasure of eating.). In fact, Korean style raw beef liver is one of the few ways I actually like beef liver.

it's funny, I'll eat steak tartare, but I won't eat Rare or med-rare. anything else is ok with me.

I love when people tell me I'm going to get Mad Cow from eating rare meat. Nevermind it doesn't matter how well you cook the damn meat, the protein that causes mad cow (PrPsc) is tough as hell. That's when I tell them that a chemical in smoke/charred meat causes genetic mutations. :p

That's the only way I like steak. Otherwise, it takes so long to chew it that it's not worth eating it. I don't have time to spend half an hour to an hour eating. That's ridiculous. I don't like there being any pink in the steak, either, because that makes it seem gross to me. So I really don't like steak...

I started off loving it well done, then went to shoe leather and then when I became a cook I started liking it rarer and rarer. Now I'm a vegetarian so now I like it mooing and not being eaten by me :p

You are so, so right. What's the point in having good bit of fillet if you're going to wreck it? Waste of good meat. In a restaurant I once ate a steak so rare that even the A&E nurse opposite me looked totally horrified by the amount of blood on show. It was a proud moment.
