I have a few.
I like Chet Baker's voice. His trumpet playing ain't bad either.
Ella Fitzgerald and Billie Holiday, for some generic examples.
Speaking of generic, Johnny Cash. Nothing ground breaking there.
I like Dawn Upshaw, she does new works and I respect that.
Joe Williams rocks. I saw him in concert before he died..."The song was written before sex became germ warefare..." Fuckin' love that guy.
There might be some others that I dig, I just can't think of them right now. I like some gruff voices, but I can't bring any to mind.

Messiah (http://en.wikipedia.org/wiki/Messiah_Marcolin), probably. I usually don't focus on vocals so much and often I think certain songs would be better without them, but this guy's voice is just so powerful that it really brings something to the music.
I'd probably choose a gravelly voice were I composing music of my own, though.
