Assuming that the three basic types of rhetoric (ethos, pathos, logos) are also the main methods that define decisions and understandings, which one of these is the pinacle of human understanding that separates us most from other animals?

I myself would have to say logos...

I'd say ethos as well as logos. The concepts of "trustworthiness" and "reputability" are uniquely human in that they are ways of judging the quality of the rhetoric without resorting to simple emotional judgements or instincts like other animals.

Ethos is logical emotion.
