The Chicken Pot Pie Thread!

Here we are, to discuss the merits of the chicken pot pie, the King of savory pies!

All non-dessert pies can be discussed here, and I am very interested in discussing the differences between the pot pie and other meat-based pies in other countries.

For instance, wikipedia makes it sound like the insides of british and australian meat pies are more like a kind of dough. Am I reading that right?

Edit: Actually, I reread the entry, and realized that I completely misunderstood. :p by 'body', they were referring to the bottom crust. *nod*

INGREDIENTS:

* 3 cups cooked chicken, chopped
* 1 1/2 cups chicken broth
* 1 purchased or homemade pie crust
* 1/4 cup butter
* 8 ounces sliced fresh mushrooms
* 1 medium onion, chopped
* 1/2 cup sliced celery
* 1/4 cup chopped red bell pepper
* 1/3 cup all-purpose flour
* 1 teaspoon poultry seasoning
* 1 cup milk or half-and-half
* 1/2 cup frozen peas
* 1 egg, beaten

PREPARATION:
Prepare pie crust.

In a large saucepan, melt butter or margarine. Add mushrooms, onion, celery and red bell pepper. Cook for about 3 minutes, or until vegetables are tender. Stir in flour, poultry seasoning, 1/2 teaspoon salt (less if using salty broth) and 1/4 teaspoon pepper. Add the broth and milk; cook and stir until thickened and bubbling. Stir in chicken and peas; pour into a round casserole dish. Brush the edges of the casserole with beaten egg to help the pie crust adhere. Place pie crust over the mixture; cut to fit and crimp edges all around. Cut steam vents in top. If desired, re-roll and cut excess pastry into strips or decorative shapes and lay over the crust. Brush chicken pot pie with remaining beaten egg. Bake at 400° for 30 to 40 minutes, or until crust is browned.
Chicken pot pie recipe serves 6.

What's wrong with kidneys? I've never had them in a pie, but a Chinese place I know makes them sliced, fried and flavored with ginger and other spices and they're pretty good.

haggis actually taste pretty damn good, i was suprised. i imagined it tasting very bland and awful

Have you ever thought about what the skins of sausages are related too?

I don't like sausages either, though I do like hot dogs.

Still, intestines can be thoroughly washed inside and out. Even if you wash a kidney, it's still a pee filter. :p

Cornish Pasties are the way to go. Hmmmm good


CORNISH PASTIES

PASTRY:

4 cups flour
1/8 teaspoon salt
1 ½ cups lard, chilled (3/4 lb) cut into ¼ inch cubes
8-10 tablespoons ice water
1 egg, beaten (for egg wash)

FILLING:

1 cup coarsely chopped white, yellow, or Swede (Rutabaga) turnips
2 cups finely diced lean boneless beef, top round or skirt steak. Flank would be good, too.
1 cup coarsely chopped onions
2 cups finely diced potatoes
1 ½ tsp salt
1 tsp pepper

Preheat oven to 400 degrees F.
To make pastry, rub together flour and fat to make a coarse meal. Add 8 tablesppons ice water all at once. If dough crumbles, add more water. Refrigerate to rest one hour before rolling out.

Roll dough to a circle ¼ inch thick and cut into 6 inch rounds. Re-roll and scraps and cut into additional circles.

To prepare filling, cut ingredients into uniformly small pieces. It's important to have the potatoes and the meat cooked during the same time period since they will be cooking together, so cut to appropriately sized cubes to effect that end result.

Combine ingredients in a bowl to mix evenly. Put ¼ cup of the mixture into the center of a rolled out pastry.

Moisten pasty edges, fold in half, and crimp to seal. Place on a buttered baking sheet and brush lightly with egg wash. Make 2 slits in each pasty to allow steam to escape.

Bake at 400 degrees F 15 minutes, reduce heat and continue at 350 degrees F until golden.

Serve hot or cold.

A fun idea for preparing these is to use two kinds of filling in each pasty – one sweet and one savory. For example, put an apple filling on the right half. Eat your way through from dinner to dessert! To identify which side is which, initial one side to indicate its contents

Yeah, kidneys are great either in Kate and Sidney pie/pudding, or devilled.

Black pudding and haggis are also brilliant!

Mmm, pasties. They should be closer to 12" than 6", though, and crimped across the top to look like little dinosaurs.

That picture looks like someone stuffed a pie with that chunky cat-food that smells vaguely like feet and despair.
Most savory pies/puddings look pretty gross, though, and still taste good. I guess it comes with the territory.

Having seen a documentary on how food photographers set up their shots, that may not be too far from the truth. I'd probably still try it though, you never know :D

I used to make chicken pot pie for dinner, I would take the canned cresent rolls (un rolled) and put the wide part of the triangle in the bottom of the pie pan with the narrow end of the triangle drapped over the outside, then I would put in my precooked ingredients inside (chicken cubes, cream of chicken soup, peas, carrots, celery, broccoli.......whatever else I could find.......sometimes rice) and fold the narrow end of the cresent rolls in to the center (does that make sense?

Then I would bake it until the cresent rolls were done, and eat it.

It's actually pretty nice looking when you are done......fancy even.

I have also made fruit pies this way, but instead of all the chicken and veggies inside I put pie filling. (cherry, apple, etc.)

Now basically if I am going to make a meat pie, I make shepard's pie, but I don't eat it.......it grosses me out.

My wife makes a 'flat-pan' variant of about the same recipe, I think. She makes it on a big flat tray, leaving a gap in the middle when all the points poke back on their tail... we call it 'Chicken Circle".

yep, I have seen that done too. it's also very pretty.

Last night for example we were having chicken and rice for dinner and it wasn't very pretty so I had to cook some broccoli, carrots and squash so that the plate was colorful........I guess in the end we have better meals nutrition wise, but it drives my husband crazy, like when we used to eat sandwiches and he wanted meat, mustard, bread, and I would add tomatoes, lettuce, pickles, banana peppers.......you know, to make it pretty. :p

I tend to like frittata better than chicken pot pie, if it's summertime. Chicken pot pie is really a cold weather food.

A chilled frittata made with spinach, onion, and a bit of prosciutto is heavenly.

I was 'cured' by mashed potatoes and baked beans. Foods of the gods separately... even better together...

Yes... I remember that. Now, if it can easily be separated, I'll probably separate, but if it gets good and mixed, I'll eat as is.

You never get 'cured' of OCD, do you... you just learn to accomodate.

I am doing so much better. I wore unmatched socks yesterday just because I knew it would irk me. I functioned pretty much normal, I got pretty distracted by it a few times and my work suffered, but in the end I was still more productive than my coworkers so nobody really noticed, except for my husband who was confused that I wasn't "on the ball" (as he says)

*lol* When the gold mines in California ran out, those Cornish miners (with Irish and other folks) managed to migrate to the other side of the Sierra to Virginia City and the silver mines of the Comstock.

They brought their Cornish pasties with them, but they ended up getting mixed in with Irish ideas, plus a little German, and the dificulties of growing ANYTHING in Nevada and you ended up with a mutated pastie that got nicknamed Tommyknockers.

Think of a pastie with mutton or (some) beef with potatoes and actual gravy and a heavier crust.

It's so cool that you understand. I talk to a few people about it when they question my weirdness and they just don't get the power of the compulsion, they think "well, if you don't like it, then don't do it" and they can't understand my discomfort (putting it lightly) with not giving in.

It's very much a catch 22 for me, either way I am uncomfortable, giving in to the compulsion because I feel weak, and not giving in because I feel wrong.

For me, it's a matter of what matters.

Sometimes, I'll let little compulsions have their way... they are almost un-noticable, basically almost unconscious, and they harm nothing... such as drumming my fingers... I automatically drum 'fours', and four-fours. This I can live with.

But, if I can find a logical reason why a compulsion is destructive, I will fight it. So - my old problem with hand-washing gets the hit-list, because it strips the skin of natural oils, and is often impractical in the 'real world'. As it happens, since I know work with chemicals, I actually have NEED of 'compulsive' handwashing as a job requirement.

So - now I'm in my early-thirties, and maybe a textbook case of the fact that OCD can be self-medicated... by picking your battles, and just sticking with it. Even other OCD 'sufferers' (I say 'sufferers', because there IS good as well as bad in OCD) sometimes have to watch me for a while before they start 'picking it up'.
