Ok, the cable service that we're thinking of getting had the option of installing "additional outlets." I'd assume that this would be for connecting another TV set. Now tell me, what use is that? I was under the impression that only one TV could get hooked up to cable.

Can each TV watch what it wants, or do they all have to watch the same thing?

Watch whatever you want, while someone is watching the news in the other room.

That sounds good. Although you're in the US, right? I hope it's the same in Aus...

The cable just brings cable into the house, and the outlets bring it to the other rooms in the same way an antenee does. The tuner, which is either your tv or a box if your tv is ass old, determines which of the tv channels you watch. That's the whole "Cable ready" thing you used to see on tvs but don't so much anymore becuase it's a given.

It depends on how modern the signal moving through your cable connection is. If you have an oldfashioned analog signal you can hook up multiple tvs that can all display different channels, though when you plug in too many cables the signal will start to degrade.
If you however receive digital tv, which requires a decoder, it is possible you can only connect one tv. It is however also possible that the decoder is only needed to watch certain special channels.

We'd be getting digital cable, but they still offer additional outlets...

The additional outlets will still run 'regular' cable, but a box is neccisary for the 'digital' channels. My old place (three old places ago) had digital cable in the living room and regular in all the other rooms. Kind of a waste, because no one ever hung out in the living room, but there it was. We had all the channels, which was cool, but I never hung out in the living room either...

Absolutely not true. You can hook up as many tvs as you want to basic cable. Of course, any tv you wish to get premium channels on will need a cable box. But you could easily have multiple tvs and multiple cable boxes.
Also, there is broadband to consider now. *nod*
Warning: Cable box remotes are brittle. You should continue to use your TV's remote to beat people.

Got me broadband. Since I get broadband, phone and cable from the same company, I get cheaper cable... :D
