If you are judging according to success you have to consider 16th c. Korean admiral Yi Sun-sin.
During seven years of war with Japan Admiral Yi never lost one of 23 battles. During the Battle of Hansan Yi sank 59 of the 73 Japanese ships that opposed him. At the Battle of Myongnyang he defeated 130 enemy ships with only 13 of his own (compare that to the more famous Nelson at Trafalgar, which was 27 English ships vs. 33 French and Spanish ships).

Genghis Kahn: he turned a series of nomads into an army that was virtually undefeated. Not to mention that his army could travel at speeds that couldn't be broken until the mechanized armies of the 19th century.
A more obscure choice, I'd say Belisarius. He went throughout the Byzantine empire defeating Goths, Vandals and Persians, and he extended it to the farthest point it could have in its time, nearly reaching it to the same territories of the Roman Empire during its height, missing only parts of Britain, Spain and France.

Really? He was a great military leader and all, but ultimately lost what he was fighting for...
I'd have to go with Alexander the Great, if only for his never having lost a battle, his conquest of most of the 'known world', and an attempt to try to combine eastern and western worlds, before he died so early.
