The following covers were more popular than the originals:

Jimi Hendrix' version of Bob Dylan's All Along the Watchtower
Peter, Paul, and Mary's Blowin' in the Wind (also originally by Dylan)
Eric Clapton's rendition of J.J. Cale's After Midnight
Manfred Mann's cover of Bruce Springsteen's Blinded By the Light
George Benson's release of The Drifters' On Broadway
The Temptations great recording of The Undisputed Truth's Papa Was a Rollin' Stone
The Talking Heads' Take Me to the River (originally done by Al Green)
Unchained Melody was originally done by Les Baxter and His Orchestra, but made famous by the Righteous Brothers
Elvis Presley recorded Blue Suede Shoes, orginally performed by Carl Perkins

But, perhaps the best cover of all time is...drum roll...

William Hung's classic rendition of Ricky Martin's She Bangs ;)

I'm rather partial to the Smash Mouth version of "I'm a Believer."

And, of course, pretty much any cover of a Bob Dylan song involves better singing than the original, whether or not it's actually better overall. :p (Don't get me wrong - I like listening to Dylan as much as the next person, but Pavarotti he ain't.)

Sorry, I have to question your taste in music now. Manson's cover of Sweet Dreams was pathetic compared to the haunting power of Annie Lennox's original.

Anyway, I'm having trouble coming up with many, and I'm sure I'll be shellacked for this one, but I'm going with Ben Harper's covers of Sexual Healing and The Drugs Don't Work.

OK, I have a cover I really, really hate. It's Outlandish's cover of "Aïcha" by Cheb Khaled. The original is a wonderful, little, melodic Middle-Eastern ditty filled with emotion, and the cover is a saccharine, r&b-ish monstrosity which unfortunately became a bigger hit than the original, which is such a shame, seeing as Khaled has many other good songs that would have deserved the international exposure...

Iron & Wine's cover of The Postal Service's "Such Great Heights" deserves mention, at least for it's popularity as a cover.
And the fact that people think Iron & Wine did it first and The Postal Service version (oringinal) is stupid, makes this song noteworthy.

Most of the covers on the American albums are pretty kick ass.

I Won't Back Down, Solitary Man...they both have an added weight-I'm more apt to buy Cash's storyteller as a solitary man than I am Niel Diamond (I've seen what's thrown on stage...) and I Won't Back Down has that weathered resolve that is only hinted at in Petty's original (Petty singing back up on both helps as well). In My Life recorded when it was, again.

There is a text that the tone of Cash's voice ads to the 'storyteller' songs that brings them to life sometimes in a way that the original artist can't.
