Actually I think that the groups most commonly made jokes of are minorities. A quick look at comedy central programing would give you that much.

That Blue Collar show is about white people, but not suburban middle-class white people (who make up the majority), instead low-class Southern white people.

Dave Chappelle pokes fun primarily at black folks, with all of those racial sterotypes, and white folks occassionally too.

Mind of Menendez is the new one, and it primarily pokes at Hispanics.
