White, surely, for a pasta based meal? Depending on what meat you have in it I suppose... if you're having minced beef in there red would be more appropriate, but if you're going for vegetables then I'd say white. Something classy if you can afford it.

A particularly fine Chiraz, for example, or a touch of Chablis?

I havent touched the cook book in years since i had learn how to cook on my own, and to be honest the first meals that i ever learnt to cook were the ones that my mum would cook for me and then followed all the meals wich former gf would ask for so coming to the present there arent that many meals that i dont know how to cook. Actualy i enjoy cooking its kinda like art and if the company is right well it becomes something of an event.

Try make a Chicken Tikka Masala ;)

mild curry dish of chicken in a tomato-based sauce, cooked tandoori style (in a charcoal-fired oven). Optional hefty dose of tartrazine lends luminescent orange glow. (As described by BBC)
Chicken tikka masala has a truly postcolonial history, produced when one of the world's greatest cuisines found itself confronted by a British palette unused to anything spicier than table salt. Legend has it one obstinate diner demanded gravy on tandoori chicken. A bemused chef responded by adding tin of Campbell's tomato soup and pinch of spices, unwittingly partaking in early example of fusion cookery.

but i prefer mediterranean foods, they tend to caress the mouth as food should do so obviously when the brain is stimulated in ways which mediterranean food does then the skys the limit
