I'm not familiar with too many ska bands, but some of my favorites are Five Iron Frenzy and the OC Supertones (both are Christian bands, so I wouldn't be too surprised if no ones heard of them).

Ska was originally an early pre-cursor to reggae from the 60's distinguished by its 'rock-steady' beat, and associated with such giants of Jamaican music as Desmond Dekker and the hugely influential Skatelites. The Wailers (as in 'Bob Marley and the') were also originally a ska band. It's an oversimplification, but reggae developed out of ska when someone decided to add an off-beat or two.
Ska enjoyed a post-punk revival in the UK in the late 70's, when the Two-Tone label gave us Madness, the Specials, the Selecter, the [English] Beat, the Bodysnatchers and several other bands, of which the first two are arguably the most fondly remembered - though I'd argue that Madness often strayed quite a long way from ska, especially after the 'Baggy Trousers' album.
Since then, ska has largely been a niche market, though some ska bands have occasionally risen to popularity - often, as in the case of No Doubt, by in fact dropping all but the most superficial references to ska in their music and image.
