Pretty self-explanatory, we pick some music for a certain situation that suits the theme/atomsphere. Stuff that you thinks apporiate for the situation.

For example:

The LotR soundtrack accompanies me playing Battle for Middle-Earth 2 quite well... And I usually listened to Rammstein when playing Red Alert 2.

When I play Starcraft, I use the Starship Troopers soundtrack.
When I play World of Warcraft, I put a lot of Philip Glass's "Koyaanisqatsi/Powaqqatsi/Naqoyqatsi" stuff as well as the album "Passages" which he did with Ravi Shankar. Also the actual soundtracks for Warcraft III and WoW do the trick.
The year I got Ocarina of Time for Christmas, I also got Mussorgsky's "Pictures at an Exhibition", and the two became integrated into a single game experience. One always accompanies the other in my mind.
Katamari Damacy's soundtracks need no adjustment. Using them for Grand Theft Auto is not a bad idea though, and kind of the same idea when you're running down pedestrians.
