My afternoon with the doctor.

All is well, but I've been feeling unusually tired lately. As a person who has battled depression for 2 decades, I figure it was part of that.

Nope.

My cholesterol is 295.

295!!

All that without bacon. I see a lot of baked fish in my future. What really sucks is I make the best fried chicken in the world. Chicken fried so juicy and tender it'll make you smack yo mama. No more of that, though. *grumble*

Damn heart. Damn arteries. Intelligently Designed, my ass. Anyone with half a brain would design a system that can handle fried chicken.

Oh well. So how's by ya'll?

Well send up some recipes, folks. I'm a Cajun ... we deep fry everything and then slather it in scrapple and serve it with butter-soaked cornbread.

Seriously though, doesn't Cajun cooking consist of a lot of seafood? What's the matter with you? Eat some oatmeal or something.

Yeah it is ... if I were 10-15 years older. I'm only 33.

He recommended a radical shift in diet and a daily walk around the neighborhood. He went over some things with me and we agreed to avoid medications until seeing what a lifestyle change will do.

I'll go see him again in a couple of weeks and we'll see how things are going.

Be careful if your doctor puts you on Lipitor or another cholesterol controlling drug; they need to moniotr you with blood tests VERY carefully.

My mom had 'serious side effects' which the doctor pooh poohed until she shoved the literature for the stuff under his nose. He had no idea it could cause cataracts and loss of memory. :-p

That would be my fate if I lived with my grandmother; however, I live with my parents who, despite practically raising themselves due to their own parents working all the time while they were growing up, can barely cook crock-pot meals.

as for healthy food...try lemon chicken...my sister makes a killer version, maybe I can get the recipe from her.

ETA: oh, and from what I remember, Extra Virgin Olive Oil is good for lowering the "bad" cholesterol

healthy doesn't mean it has to taste bad. Chicken is a very lean meat. Going vegan isn't nessicary to eat healthy...just cutting back heavily on fats and sugars.

I strongly recommend sauteeing fish in a bit (read as: just enough to wet the bottom of the pan!) of olive oil and flavoring it with lemon, parsley, and of course, lots of fresh cracked pepper. :)

A nice marinade for lamb or pork -- 2 tablespoons of olive oil, a half teaspoon of salt, a half teaspoon of pepper, two sprigs of rosemary, a teaspoon of sugar, two cloves of garlic mashed to paste, and the zest of an entire lemon. That should be able to coat a panful of meat... give it a shot!

Have you considered what you are frying it with? The oil makes a big difference, as some oil is worse than others. Can't quite remember which are better, but maybe you might be able to find something tasty and healthier. It'll still be fried of course, but hey, it should be better than frying it with baaaaaad oil.

well, yes...deep frying a piece of chicken, then coating it in salt, frying it again, and toping it with assorted things like mayo usually will boost the calories.

even better...rather than just putting cracked pepper on it, try this.
take whole peppercorns (1/4 tsp or so). Put the olive oil in the pan. put over medium heat. put peppercorns in the oil, and put a cover over the pan (this is important or you will be pelted by hot pieces of peppercorn). i will sound like little firecrackers as the pepper explodes, which will flavor the oil really nicely.

I came back from my first physical in 12 years with a pretty good report. The blemish was also cholesterol. In my case it was 265 total with only 40 of the HDL/LDL, or whatever the 'good' cholesterol was. I don't like medicine and I told the doc that this was the first time it ever was above 100. He told me to start exercising again. Even the first couple weeks of mile and a half walks brought it down to 210. Brought the good level up to 60. I figure when I start jogging 3 miles, I'll get it back under 150.

One other thing he told me. "Welcome to America".

My ma is a vegetarian and has extremely high cholesterol. Its not always your diet. They told her it had a lot to do with her genes.
