Aye, corn muffins are jolly good.
I like corn bread as well, especially as a side to chili.
I had a cranberry/orange muffin once- it was interesting-I'd eat one again.

I had some Mexican cornbread type muffins. They were actually better than the Mexi corn bread baked in a traditonal pan....seemed like it was flufflier and tastier in muffin form.

My flatmate-to-be makes spinach-cheese-oregano muffins that immediately qualified her as my wife-to-be. God, hasten her return.

Actually, I had some spicy corn bread a few days ago. Alas, it was crappy. But that's mostly the cafeterias fault. They can't cook.

my girls also like corn muffins (it's the only kind they can have though)
that reminds me I need to restock the freezer with some though......;)
I like blueberry muffins, but I don't get them very often, and I only like them if I make them, and try to eat them before they are fully cooled. ;)

It's relaxing to me, and I really enjoy it. If I didnt have small children, I would most likely open a small restaurant and turn my passion into money. I worked those long hours for 7 years and it's just not conducive to a family life. Unless of course I brought them up in the biz. hmm....

what's the difference between southern and northern?
I assume I make southern but it's a little sweet......I add more sugar than the recipe calls for though.

in the south corn muffins=sweet
i've never had corn muffins down here, so i wouldn't know about their level of sweetness.
but my mom used to bake cornbread with the Jiffy mix (lol) up in Northern Wisconsin, and that was some sweet cornbread.
The Ex used to make me southern (fried in a skillet) corn bread all the time, which for my palate required tons of honey and/or butter... it was not sweet to my taste at all, not like mom's.

I used that jiffy mix in a dutch oven- chili or taco meat cooked til almost done, then mix up the Jiffy cornbread mix and pour evenly over the meat-put the lid back on for ten minutes.
Its great camping food. I lead a cub scout den and let them help a lot on thsi dish.
MUFFINS, gotta love 'em! Well, lets see, i like lemon muffins too, but then blueberry, chocolate(& and -chip), those are pretty much my favourite at the moment

theres this muffin place by my house, and they make the BEST apple muffins....
