Late, but yummy dinner!

I had some unexpected company stop by for dinner so I whipped up a pot roast with Chimichurri sauce, roasted vegetables and beer. :)

I had never tried a Chimichurri sauce. It was fairly easy and sounded good so I made the sauce and threw it into a roasting bag along with the roast and I let it marinade all day. Had I known to expect company, I would have given it 24-48 hours to marinade. Then I added the veggies and roasted it for an hour and a half. Came out delightful! :)

The only reason I'm posting this is to make you all hungry and jealous.

Hungry because you don't have any Chimichurri Roast, and jealous because men who can cook are hard to find. :p

I take great pride in my cooking abilities, but I must say Goofles that your roast sounds dee-lish. Send me the recipe if you dont mind parting with it. I've never had of the Chirichimichum whatever you said it was.

It's garlic, oregeno (mexican), Jalapeno blended with 2:1 olive oil: red wine vinegar.

It's good stuff.

There are many variations on Chimichurri. Which is one of the things I like about it; It's open to personalization.

It's a garlic-parsley sauce, so as long as you have those two things(and olive oil), it's pretty much a chimichurri sauce. :)

Here's my recipe:
1 bunch fresh parsley, chopped
8 cloves garlic, minced
3/4 cup olive oil
1/4 cup red wine vinegar
3 tablespoons lemon juice
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon ground cayenne pepper

I never really cared for Jalapeno. The flavor doesn't agree with me.

Oh that sounds good LG.....

CL has inspired me to prepare some lamb. I will probably save this marinade for some beef. And home made caesar salad....and fresh baked garlic bread.....and chocolate cheesecake for dessert. Oh lord. Its only 10am and I'm ready for a a 7 course meal. Sheesh.

I specialize in easy to prepare meals that have to be prepared way in advance:

Marinades, Slow cooker recipes(chili, swedish meatballs, crockpot barbecue), etc.

The longer a food has to cook, the better I like it. It's like Aromatherapy. :)

Nothin says lovin like a house that smells like food all the time. I made meatballs last night and Joe kept walking around the house inhaling. I told him he was going to hypervenilate if he didnt stop.
