Monty Python and the Quest for the Holy Grail is the best spoof ever, except maybe for Robin Hood: Prince of Thieves. Wait--you mean that Costner movie was supposed to be serious?

I think one of my favorite movie spoofs, though, is Galaxy Quest.

Hot Shots 2 was a spoof of the Rambo series..

I vote for Austin Powers (the first one only).. they spoofed nearly every Bond movie, in a pretty entertaining way..

Chicken Run - brilliant spoof of The Great Escape, not to mention Braveheart, Star Trek, Raiders of the Lost Ark, and too many others to mention.

Young Einstein isn't a spoof of any specific movie, but is nonetheless hilarious.

Plus a lot of others already mentioned: Galaxy Quest, Monty Python and the Holy Grail, Life of Brian, The Naked Gun, Hot Shots! - all hilariously funny.
