my answer was "beef"

some of the things i love:

-Steaks (namely rib-eye)

-Brisket

-Roast beef sandwiches (with lettuce, tomato, provolone or cheddar cheese and lots of mayonnaise)

-Pastrami/corned beef sandwiches (warmed/grilled on dark rye with mayo, 1000 island dressing, swiss, and sauerkraut)

-Corned beef hash (love it fried so that it's crunchy on the outside and mushy on the inside)

-Pot roast

-Beef tacos/burritos/enchiladas

etc.

I like most of the meats on the list but if i could have only one, it'd be beef. Chicken would have to be a close second... it is also very versatile.

I'm going with beef. It's hard to beat good beef.. when it's done right, it's unsurpassable (is that a word?)

Chicken and lamb are great too, but so different that it's hard to compare.. Ham is probably the most decadent of the meats.. there's just something about eating good ham... almost makes you feel guilty.

described visually and by taste:

bacon tastes more like pancetta than ham

canadian bacon tastes more like ham than pancetta

canadian bacon is pink -- just about the color of ham... bacon is a darker red with cream-colored stripes (the fat)

bacon is generally fried and eaten for breakfast or on pizza or in bacon-lettuce-tomato sandwiches (BLTs)... canadian bacon is eaten on Egg McMuffins (hehe) or on pizza.

"canadian" bacon, as it is known in the US, is made from a different cut of pork than strip (or "side" or "streaky") bacon. in this manner, back bacon is a cured pork loin rather than the pork belly used in common US bacon.

the loin cut has considerably less fat. sliced, it can be grilled on a barbeque and is quite good this way. I like to use a tomato and garlic sauce to baste the grilled back bacon.

that stuff on the egg mcmuffin, while called canadian bacon, is really a poor substitute.

buffalo (or bison, if you prefer), rocks. even ground, it's very lean in fat and very tasty. although, I've never found it to be tough. because of it's leaness, one has to careful not to overcook it.

Beef is at the top of my list, in general.
Specifically- Flank or skirt steak. Raw,
or very,very rare.

I love lamb- rack of lamb or leg of lamb, also very rare.

Ostrich tenderloin is a rare treat for me. Its not that widely available.

You're right on, man! Yes- I use either of these for fajitas-marinated with lime,tequila and chili powder.

I also like to marinate with worstechire, salt and garlic and grill like a london broil. I like that salty, tangy outside and a cool red center.

I'm not entirely sure. all I know is that every holiday season, my uncle shows up with a package for us that sees its way into the freezer and onto our family's plates at irregular intervals for the rest of the winter, and it's delicious.
I hope when I go home for the holidays there's some Moose Stew on the go.

sometimes i prefer chicken over beef.

i hate seafood, generally (i can handle fried cod with a bucket of tartar sauce, or maybe a nice mahi mahi filet, but that's about it)

I live in the Uk but spent some time in France & Belgium, but have had horse and donkey in UK (makes the best salami). Squirrels not too bad either but do you know how many squirrels it takes to make a pie?

(answer is 28 btw espescially if you ave a scout group to feed as well)

yeah, you could easily find 28 squirrels in the woods behind the home in which I grew up (in northern Wisconsin, USA).

I was in rural France several years ago and the brother of our (family's) french friend served us freshly killed rabbit.

Not that I'm aware of, although we would eat both, just not that often really. Probably something that died out a bit as we all got more multicultural.

A butcher we sometimes go to cuts pork chops for us with the bone in-like mini, but very thick T-bones. They are excellent!

I like mine floured and smeared with english mustard dry fried and then quenched with an IPA till evaporated (migt even add Garlic to it)

Brown sauce,mmm.. even makes spam taste better

I think spaam is in the "lips and assholes" category. Technically, I guess it is meat, though. I'm not interested in it. I feel there is so much more meat to go through before I get to that.
I try to avoid any Hormel or Tyson products too.

i'd think that Spam has as much right to its own meat class as would things like braunschweiger, sausage (polska kielbasa, italian sausage, polish sausage, breakfast sausage, bratwurst, etc.) and hot dogs/franks/knockwurst.

Does anybody else see chicken and fish as something other than meat? I know they come from animals too, and I can completely see why they're counted as meat by some people, but I've always thought of meat as just coming from mammals (and also Alligators).

I had a guy show up for work with glaze on his face once. He was a low life and his girl was a pig. So his condition was sickening to the rest of us.

My all time fave is venison backstrap. Buffalo and beefalo are quite nice. Moose, elk, and squirrel are also good.
Wild goose, duck, quail, and pheasant are quite yummy, too.

Roasted armadillo and BBQed racoon are not good at all. :(

where do you live? (generally.. i'm not looking to stalk or anything. hehe)

this is the first i've heard of anyone intentionally eating horse meat. (Wendy's doesn't count... you're a victim in that case!)

You must be living in isolation in the US that you haven't heard of people eating horse. That's fairly common in Asia and Europe, and only really taboo in the US. It's especially eaten in Quebec, France, Belgium, Romania, and here in Japan.

I enjoy a nice plate of horse sashimi about once a month.

well we have Worcestershire sauce and steak sauce (which may have Worcestershire sauce in it). If brown sauce is one of the above, then I know what it tastes like.

As for eating horse, yeah... I've been to France (Paris and rural France -- Limoges), Italy, Czech Republic, Mexico and Canada... and had never heard of people eating horse.

And horse has never been the theme ingredient in Iron Chef (to my knowledge) though Hiroyuki Sakai could probably make it taste good.

I usually say the difference is the tamarinds - which is lacking in the A1 brand. there are other slight differences, as well. in my opinion, HP is the superior sauce.

I forgot about sashimi. toro ("fatty" tuna) is one of my favourites.

well a turducken (turkey/duck/chicken with stuffing in between the layers) takes 2-5 days to cook.

how long does the 7-10 bird things take to cook, 2 weeks? hehe

I tend to classify myself as carniverous, not omniverous. I was sort of hoping for an "all of the above" option.

Failing that, I was torn between Beef (mmm.... nice tender rare steak) and Bacon (can be wrapped around said beef) and Other. Now the Other would be a (nice tender rare) Ostrich steak. Now that's a knock-over-your-grandmother food. (Although I'd be sure to help her up after I got it.) Mmmm... meat.:D
