Well, Fate tends to have less intramuscular marbling than Choice. Sometimes Fate also has color variations or a greater abundance of connective tissue. Suggested for stews, BBQ or other low, slow and prefferrably moist cooking techniques.

Damn! Now I really wish I'd gotten a picture of Apollo's butt. Talk about intramuscular marbling...
