Man I love tacos.
Any kind ... chicken, beef, whatever ... slap some meat, cheese, lettuce, salsa in a deep fried corn tortilla and *BAM* ... perfection.

Beef with no veggies and by god YES is it good. Lack of tex-mex were I am living but you can always make your own!

I prefer fajitas or quesadillas - generally beef, but occasionally chicken or shrimp or veggie. =)
For those that like burritos, I work near an asian burrito place - they have things like "Thai Chicken burritos" served with tortilla chips and a fortune cookie. It's......odd, but some of them are really good, like the eggplant burrito.

I like cochinita pibil, a Mexican dish that consists approximately of bright orange marinated spiced pork fragments in a miniature tortilla =)
