What's your favourite pasta sauce?

I've got two, I invented them both more or less myself.

Ham&Cream Sauce with Thyme:

200 gr cooked ham, sliced (a little bit marbled is best)
1 onion, chopped
1 clove of garlic, finely chopped
1 cup of whipping cream (low fat if possible, otherwise the sauce will be very heavy)
some white wine
dried or fresh thyme
Olive Oil
grated Parmiggiano cheese
Salt&Pepper
a pinch of Chayenne Pepper or a few drops of Tabasco sauce, to taste

Cut the ham in small squares. Fry the chopped onion and garlic in some olive oil, add ham. Fry until the onions become transparent, then pour in some white wine (about half a glass). Add the cream, thyme, salt, peper, and chayenne pepper and let it simmer for about 10 minutes. Add Parmiggiano before serving.

Tomatoe&Herb Sauce

1 can of chopped tomatoes
1 onion, chopped fine
1 large clove of garlic, chopped fine
1 large spoons of concentrated tomatoe sauce
2 large spoons of whipping cream
fresh herbs (Majoram, Thyme, Oregano, Parsley, Basil) finely chopped
Olive oil
Salt&Pepper
grated Parmiggiano cheese

Fry onions and garlic in olive oil, add chopped tomatoes. Add concentrated tomatoe sauce, cream, salt&pepper and herbs, let it simmer untill sauce thickens a bit. Add Parmiggiano before serving.

They are both fantastic, I can assure you ;)
