When you see preview on TV, how can they have all the reviews from critics when the movie doesn't come out for a couple months in theaters?

Critics, as well as movie test audiences, do see the movies well ahead of the release date. The audience reactions sometimes result in last minute editing, reshooting of scenes, etc. to improve the movie's appeal to a wide audience.

Because the critics are in the pockets of the film guys, they pay them to say good stuff/bad stuff for a film - at least that used to be the case. Nowadays they just use a computer to simulate what a critic will say before said critic sees the film - for example the program for the Sun newspaper randomly picks between "Brill" and "Superb!!!" for any given film, this ensuring 100% accuracy between reviewer and quote.
