The Hitman series. It's brilliant. Just keeps in getting better and better with each
new title. Ditto Thief and splinter cell, even if choas theory was slightly on the small side.
Fallout and Baldurs gate. Mostly for thier near adult themes. Two very enjoyable
series nevertheless.
KotoR. Who didn't ever wish to force-choke someone.
And finally an honourable mention to Delta force and Rainbow six for making me plan and think before bursting in with all guns blazing.
Civilization by far... Ever more if you get to include Alpha Centauri, Master of Magic, and Master of Orion which were pretty much variations of the same system.
The Monkey Island series.
Also, why in god's name isn't Final Fantasy up there?

My absolute favorite, which I'm surprised nobody mentioned, is Mario. Especially the old NES/Super NES games. Then after that would have to be Starcraft and Warcraft. Starcraft UMS are awesome.

No one has yet mentioned the Elder Scrolls Series, but as I've only played Morrowind, I won't mention it either. However, I will say that Fallout is the best series ever made. GTA is excellent as well, but once Fallout 3 comes out, I'm certain it will blow our beloved GTA to shreds. Why? Because Bethesda, Morrowind's creators, are working on FO3.

Ah, that's not always true, but I note you said generally. Personally, I think that more game developers should be basically really constructing a universe for us to play about in, but not in the traditional term of the thing. What I mean is, a true world, with background fluff coming out of every orifice. Make it as original as possible, especially if it's sci-fi or fantasy. Then you widen the options. Get a team of professional novelists to design a sci-fi universe, and thinkabout it. Space naval warfare sim, city builder, squad based shooter, adventure, mmorpg, first person shooter... you expand it! and if they do a really good job in creating the world that you play in, it's so much more enjoyable. it just feels that it has so much more depth.
and for them, it's a complete win. With so much more depth, it's a cash cow they can milk for years and years, without it necessarily becoming tired and terrible.
EDIT 2: to clarify, I don't think that the game should necessarily allow you full freedom in this universe, it could be linear scripted... but as long as the background is there, you can do so much more with a series.

Super smash bros and the old streetfighter games kick its arse. old school beat-em-ups always destroy the ones like Tekken. Gimme OMF 2097 anyday, personally.

Dynasty Warriors!
Its my favorite book (The Three Kingdoms), combined with my favorite pasttime (Sitting on my ass and killing people). I play it ENDLESSLY. I know just about EVERYTHING about the entire series.
I am a minor demi-god at that series. I can take on Lu Bu on Very Hard with an untouched Qiao Sister and have a better than 50% chance of winning. I beat 3 and 3x every single way possible, doing everything possible within the games.
I've forged a reunited empire within 15 turns in Dynasty Empires, I've beaten every scenerio in Dynasty Tactics, seen every movie and cutscene for myself. I've had an over 500,000 KO'd combo in Dynasty Tactics 2.
All of that, and I can still play those games and enjoy them. The thrill of battle, the enjoyment of history, the intriguing fighting styles. All of it, golden.

WWF/WWE Smackdown series (Last one wasn't that great of an improvement though, more of a disappointment really)
Simulation/Strategy belongs to SimCity. One of the most interest and best strategy games out there, with an elegant design on the surface but a deep gameplay under the skin. With the "hard-core" simulations, Sub Command is on my top list (Dangerous Waters, made by the same company, is also nice but is online-ordered only), though I've heard that Silent Hunter III is quite nice as well. With flight sims, Jane's F-15 gave me a really realistic experience, while Lock On is good in general. Il-2 Sturmovik and its successor, Pacific Fighters, are also nice as well, though among other things the single player is rather shallow and dull.
With action/adventure games, Splinter Cell. Though I also play tactical and "squad" shooter games (aside from the occasional sci-fi and run-and-guns), it has a degree of replayability and has an unique stealth-based gameplay in general. I played both the first one and the Chaos Theory, and needlessly to say, the latter is arguably one of the best new games our there currently.

I advise you to try out 3 and then 3x, they are significantly better than 4 in terms of gameplay. Slowdown and clipping are a bit worse, but the game is infinately more FUN in 3 and 3x...Mind the archers though, they can kill you real quick in the early games.
Dynasty Empires would be one of my absolute favorite games if it had a 2 player mode. Wouldn't it? Can't wait for DW5: Empires.
DW5 looks really good, I've only played it for about 20 hours though, so I can't say how it stands up to long-term playing. Unfortunately the 2 player mode suffers from extremely short draw-distance and some slowdown problems...which are absent in the single player mode.

I have a hard time with game series on a whole. They tend to lose even more whatever it was that made the first few games great with each new installment.
Of course, I'll opt for a couple. Final Fantasy has been surprisingly long-lasting, though it does have a hit-or-miss history. And the online installment was painful. Silent Hill was great in its first two iterations; the third one began showing signs of age and the fourth one is where it all unravelled.

Moving onto more recent series... Worms is great, GTA (San Andreas is actually kinda disappointing for me) is fantastic, but my vote goes to Gran Turismo. Go GT4, I just have 9% to go... unfortunately that's the bloody Driving Missions, urrgh...

My favourite, whose name I forget *hangs head in shame* was the one with all the electrical moves. it was probably just called lightning or something similar. It had a great scrap move, anyway.

Absolutely. And one of the first truly mature games that I've came across. And by mature I don't mean GTA "guns whores and violence" mature, I mean an intelligently told, written, and designed game for adults that isn't sickeningly patronising.
Easily the best thing out of Rockstars doors, ever. GTA is stinky, and manhunt is just... violent for the sake of shocking. Payne 2 actually has substance.

I think you mean Elektra... The Story mode was awesome, I loved kicking ass with an upgraded Nova (it has grenades) but the only bot that I couldn't use properly was Flail... I really sucked with him... and then there's that guy in Story mode with his orange-and-blue Flail THAT I COULD NOT F***ING BEAT!!!
It's really quite sad that I remember so much about a game I was playing 5 years ago...
