This is a question for people who have strict religious beliefs, or know how such beliefs work! Most religions that I know of have a day of rest on which it is forbidden to work, what I want to know is, is it ok to work on these days if you are a doctor or paramedic or something like that?
Judiasm: Yes, you may work if your work saves the life of another, or prevents something bad from happening to someone in the first place.

Yes, it's OK.
I take it as an admonishment to idiots who would work 80 hours a week and neglect themselves, their lives, and their family if allowed to.
God says you have the day off, unless you have to do something really important.
Don't you believe in taking the day off once in a while?

Although I personally do not observe a sabbath or similar day of rest, I believe that the mainstream Christian view toward it would be the one espoused by Jesus; he healed people of their illnesses on the sabbath, so I think most churches would view emergency services as being an exception to the rule.

That depends on who you ask. As a Seventh-Day-Adventist, we try to keep the Sabbath according to scripture, which means "not doing your own pleasure" "keep it holy" "not doing any work" "lawful to do good". I'm a social worker, not as medically necessary as an MD, but if a client if mine was in serious jeopardy, I'd help. I personally wouldn't bill for services on Sabbath, but helping those in need on the Sabbath, particularly things that are imperitive for the immidiate well being of others, is definitely lawful based on Christ's example.

I believe in taking time of, yeah! It was not designed to be a criticism, just a genuine enquiry about a subject I don't have much information about!

The history of the Sabbath day begins with the creation of the universe. In the Bible in the book of Genesis, you have the account of the creation story. God made the world in 6 days and rested on the seventh. If God himself chose to take a day off then we do also. Think about it, if you had to work 7 days straight...meaning you never get a day off of work, wouldn't you go a little crazy? Especcially in the now fast paced society that we live in. God knew that the world would come to this point and that he needed to start instituting the day of rest then, that it should carry over into now.
I personally try to have at least one day of rest. That doesn't mean it is Sunday, it may be saturday. Or another day that i have off of work in general i would just have that as my day of rest. Meaning....i chill out, relax, maybe even take a long bath so i can clear my mind of all the junk that has been piled up during the week.
I would have to agree with the previous postings also. Jesus himself used the example "if you have a donkey and it falls in a hole, would you not save the donkey? Or would you stick to the tradition of the elders and let it just die until you can fish him out tommorow." (that is a loose quotation from teh New Testament). The application is yes, you would help those in need even it is the sabbath. God values life over law. Hence why he is so big on being saved Grace in Jesus Christ then by trying to receive salvation through works. Which even our works are liken to filthy rags. Okay....i'm gonna stop preaching now. Hope this helps your question. If you have anymore you can refer to the first four book of the New Testament (Matthew, Mark, Luke, and John) or the first five books of the Old Testament aka the Pentatuech....aka.....the Law of Moses...(Genesis, Exodus, Leviticus, Numbers, and Deuteronomy) :D

Saving a life or protecting from harm trumps rules re: not working on the Sabbath.
