Bible Question:
If many Christians stress that the Bible cannot be taken literally, then how do we know that Jesus's death & resurrection (the basis of Christianity) was also not meant to be taken literally? Has anyone ever gone through the Easter story and looked to see if it contained symbols, etc. whose presence indicates that this story may meant to be taken as yet another metaphor for our lives and not literally as it always is?

I think the "Not to be taken literally" argument is like the "The Old Testament doesn't count" one. It applies whenever the user wishes it to apply, and not otherwise.

The bible is not made to be taken verbatem, instead to teach a message. The story of the creation is meant to convey the image of a powerful god. Most christians believe in an all powerful God. If God is all powerful, why did he take six days to create the universe instead of doing it in one fell swoop? It is simply to convey the message that God could have. The Bible tells a story to teach us. The ressurection of christ is another testament of gods power showing that he had power even over death. We can assume that this was not just another example of Gods power using a story because it is making the point that God has power over death.
