Chopsticks.

I've tried using chopsticks in the usual fashion, but I've never been able to master it (most likely due to decreased mobility in my right hand due to a particularly bad break in my rotator cuff a number of years back). So, I've found that if I use the chopsticks 'upside down', with the blocky little wooden ends pointing down at my plate, that I can eat Asian foods with much greater gusto.

Is it uncouth of me to use them in this way?

Well, much like if you were to see someone using the end of their fork as a spoon, it will quite likely solicit a good deal of amusement, but you won't offend anyone (except maybe your host)
